This Chardonnay dominated wine has a little viognier added and in the winery it is 50% aged sur lie in neutral French and American oak for 4 months and the balance in stainless steel, while Winemaker Pat Pickett considered: 'Stainless steel fermentation preserves the apple, kiwi and lime flavours, set out against refreshing acidity. Pure, sleek fruit characteristics and minimal malolactic fermentation give the wine a crisp, clean feel. The result is a bright, fresh wine chockfull of juicy Bartlett pear flavors, with a subtle hint of praline. Description: This is a medium-bodied wine with a lingering dry tannin finish. Colour: Rich burgundy. Bouquet: Complex, savoury nose of spice, white pepper, blackberry and ripe aromas combine with characters of cedar oak, toast and vanilla. Palate: A refined savoury palate of plum and blackberry fruit flavours integrated with complex spice nutmeg, cinnamon and white pepper characters. Well integrated toasty cedar and vanilla oak flavours are present, derived from barrel fermentation and maturation. Cellaring: Drinking well now, but will develop further with four to eight years in the cellar. Winemaker Notes: After crushing, the must was fermented in headed-down stainless steel fermenters. To assist extraction of colour and flavour, the juice was pumped over three times a day for seven days. The juice was then drained from the tank and the skins pressed. The wine completed primary and malolactic fermentation in a combination of new and used American and French oak barrels. Following fermentation, the wine was racked off lees and returned to the same barrels, where it was matured for 20 months. Premium fruit for this wine was sourced from McWilliam's vineyards in the famous Coonawarra region, in South Australia. The fruit was harvested in mid March to early April. (12 x 75 cl)

Description: Horse Mountain Wines embody a new spirit of adventure in winemaking in the Cape with a fresh, entrepreneurial approach, unfettered by conventional tradition but rooted in the tried and tested philosophy that fine wine is made in the vineyard. These wines come from a former dairy farm on the slopes of the Paardeberg mountain between Paarl and Wellington. The 217ha property was acquired in 1997 after its potential as a suitable terroir for quality wine production had been identified. Since then, energetic owner Craig Lardner, a former property developer with a new-found passion for winemaking, and innovative consultant viticulturist Paul Wallace, have systematically selected nearly 50ha of the 150ha of viticulturally viable ground for painstaking preparation and careful cultivation to five grape varieties. The grapes grown include Cabernet Sauvignon and Shiraz that flourish on the high-lying, high-potential Vilefontes soils. While the Merlot and Pinotage have settled in the lower-lying, rich red Swartland/Glenrosa soils and Cabernet Franc does well in the similarly low-altitude Estcourt soils. Such significant variations in soil comnbined with an exceptional climate compared with conditions in the surrounding Paarl wine growing district, earned this new viticultural pocket its own 'ward' status in 2003. Horse Mountain wines thus proudly bear the designation Wine of Origin Voor-Paardeberg on their labels. Description: The Bremerton story began in 1985 when Craig and Mignonne Willson purchased the property and established a long term restoration and development plan. The winery was established in 1988 and now has 110 acres planted at Langhorne Creek and is joint owner and manager of another 180 acres from which it selects the best fruit each year for its wines. Best quality practices ensure best quality grapes and the Bremerton vineyards predominantly grow Cabernet Sauvignon, Shiraz and Merlot, with small plantings of Sauvignon Blanc, Verdelho, Chardonnay, Malbec and Petit Verdot. The winemaking team headed by family member and winemaker Rebecca Willson has taken the quality of the wines to new standards. Rebecca seeks the best possible fruit from the Bremerton Estate and other specialised Langhorne Creek vineyards to craft traditional, full bodied, full flavoured, mouth filling Langhorne Creek wines that show a consistency of style whilst encouraging the true varietal grape characteristics to be expressed. The winery has invested heavily in a premium French & Amercian oak program using 220 litre barriques to ensure subtle and complementary oak influences. The winery utilises tradtional open top fermenters, made from stainless steel and a purpose built barrel cellar for maturation. New laboratory and tasting facilities have also been added to the winery. The best parcels of Shiraz had some of their juice drained off when the extraction colour was perfect, the juice was then cooled, settled and racked. A yeast was chosen that would enhance the natural characters of the berry and the ferment was treated just like a delicate white. The wine was then stabilised, filtered and bottled. This is the third vintage of Racy Rose, produced from 100% estate grown fruit. The philosophy behind this rose is to produce a wine that is easy drinking. The colour is bright and vibrant with a nose that shows wonderfully lifted crushed strawberry and watermelon characteristics. Description: Vasse Felix was the first commercial vineyard and winery to be established in the Margaret River region of Western Australia. The vineyard took its unusual name from an early event in the district. Vasse was a French seaman who drowned last century when his longboat overturned near the site of Busselton while exploring the coastline on the ship 'Geographe' under Captain Freycinet. Paradoxically, Felix is the Latin word for fortunate or luck. Thus the name refers to a favoured place in Australia discovered by the French. This wine displays vibrant varietal shiraz characteristics, offering ripe plum and cherry liqueur flavours, combined with chocolate and mocha aromas. Classic regional savoury and white pepper characters provide complexity and lift the fruit intensity. Vanillin and sweet smokey oak aromas provide further depth and complexity to the attractive fruit profile. The wine delivers upfront fruit sweetness with soft cherry fruit. The palate fruit profile is exactly as the wine smells and provides good fruit depth and ripeness. Torbreck THE STRUIE Shiraz Barossa Valley
Description: David Powell discovered some land in 1992 that had old Shiraz vines growing on it that were almost dead. After nursing them back to health he secured a contract to supply the grapes to a local grower. After realising that this hobby could be made into a business he decided to go full time. In 1994 he founded the company and named it Torbreck after a forrest in Scotland where he had worked as a lumberjack. The Struie sources fruit from the high altitudes of Eden Valley imparting delicate spice, white pepper and fruit characters. While the Barossa component displays a richer, deeper, more brooding flavour and intensity. The combined structure will reward extended cellaring.A 'modern classic' 'The view from the Struie down across the Dornoch Firth is as inspiring as that of the Valley floor from the Barossa Ranges. McGuigan GENUS 4 Shiraz Hunter Valley
Description: A deep scarlet purple shiraz it has a nose showing great regional intense definition along with cassis chocolate aromas and charred vanillan oak. A full bodied wine with soft fine grained tannins, rich palate and good persistence. The strong Shiraz fruit flavours of pepper, spice and cherry are complimented by a subtle underlay of coconut / vanillan American oak. The old Shiraz vines at Sandy Hollow have producd an intensely flavoured ripe fruit flavoured wine. The grapes were crushed and chilled into a rotofermenter where they were allowed to cold soak for 3 days prior to inoculation with selected yeast strains. The grapes were then pressed in a bucher tank press prior to being stored in new Schahinger American and Hungarian oak barriques for 12 months. The wine was racked on a three monthly basis prior to being racked to tank and lightly fined using egg whites. No filtration was carried out during the winemaking process. (6 x 75 cl)

Method: The must is cool fermented in closed tank with daily remontage. No sulphur is added prior to fermentation. David Franz RED ROSE Shiraz Barossa Valley South Australia
Description: Pronounced as in the flower the Red Rose this wines history started back in the late 1800's when the Stonewall vineyard was first conceived. Back then you couldn't just pop down to the local production nursery, order 50,000 vine rootlings and whack them into the ground. It wasn't even known what varieties would flourish. The best way to find out was to plant a wide variety of vines, see which did well, then propogate and plant out from these base stocks. The end result 100 or so years later is the original nursery block, full of different vines on a patch of dry ground. This mixture of vines was a difficult to pick and separate because of the hodge-podge mix of old fashioned white and premium red varieties. Finally in 2002 the penny dropped for David Franz, rather than trying to pick all the little bits and pieces separately and add them to the larger lots from the rest of the vineyards, he decided to mix the lot together and see result. As soon as all the conditions were right this old block was picked, crushed and cold macerated the must for 5 days before basket pressing, cold settling and clarifying the juice. The clears were cold fermented over three weeks to dryness, then sat on yeast lees for about a month. The resultant wine was crisp and gutsy! To bring out the voluptuous fruit flavours a small portion of clarified juice, previously frozen was added back. The only option was to bottle under Stelvin closure to ensure every ounce of vibrancy would be retained. (6 x 75 cl)
