Viu Manent Reserve Cabernet Sauvignon Colchagua Valley Chile
Description: TASTING NOTES Deep ruby red in colour, on the nose this wine exhibits lifted notes of blackcurrant, fig and date. In the mouth opulent notes of plum, dark chocolate and espresso bean dominate. A well integrated oak backbone backed by firm yet round tannins leads to a long finish. Oak 100% of the blend was matured for 16 months in French oak barrels. Winemaking Techniques Fruit was hand harvested before being destemmed and crushed to tank. The must was then given a 5 day cold soak at 10-12 º C in order to increase aroma extraction. The must was heated and inoculated with selected yeasts with temperatures peaking between 28 and 30 º C during the fermentation. Two pumpovers were carried out daily during fermentation follwed by a 2 week post fermentation maceration before pressing. A natural malolactic fermentation which started in tank was completed in barrel. The wine was then barrel aged for 16 months before being racked to tank, lightly filtered and bottled. Vineyard San Carlos, located near the town of Cunaco , Colchagua Valley . Sourced from Cabernet Sauvignon blocks with an average age of 50+ years. (12 x 75 cl)

Description: The bouquet offers subtle notes of cassis, black cherry, currants and chocolate. It is a richly textured wine with lush, ripe flavors of blackberry, Bing cherry, cassis and raspberry. Slight earthy notes of tobacco and cedar and a subtle framework of oak complete this delicious wine. From our first vintage in 1976, Tom Jordan has sought to create a soft, approachable Cabernet Sauvignon in which the winemaking is simply a logical completion of nature's work. With this in mind, Jordan Vineyard & Winery has successfully maintained a tradition of producing elegant, refined Bordeaux-style Cabernet Sauvignon in Northern California's Alexander Valley. The 2001 vintage of Cabernet Sauvignon was fermented slowly and received a gentle extended maceration in order to extract, soften and stabilize the lush, elegant tannins and concentrated flavors from the fruit before pressing. Full malolactic fermentation followed in large oak casks to soften the natural acidity and enrich the texture of the wine. The young wine was then aged for twelve months in both French and American small oak barrels and six months in neutral large oak barrels before blending to achieve an optimal balance of flavors and complexity. After bottling, the finished wine received nineteen months of additional aging in our temperature controlled cellars before release. (12 x 75 cl)

Description: Deep purple coloured Cabernet Sauvignon with a berry fruit and buttery toasted coffee oak dominating the nose. A full bodied fleshy round wine with a soft tannin structure it is displaying Blueberry fruit and toasted French oak on the palate to produce a supple rich wine. The ripe Cabernet fruit was harvested predominantly from old vine located in the Upper Hunter Valley. Machine harvested at night and transported to the Pokolbin Winery, the grapes were crushed and cold soaked for 5 days prior to inoculation with Bordeaux Red yeast. The ferment was allowed to warm to 28 degrees and as a result produced the warm secondary alcohols that give the wine mid palate sweetness. Next, the wine was matured in one and two year old French oak for 12 months prior to being transferred to stainless steel, ready for bottling. (6 x 75 cl)

Description: Situated in the cool uplands of the North Mount Lofty ranges about 50 km north of Adelaide, the vineyards of Jim Barry were established in Clare in 1959. This is a family run winery committed to producing quality wines through an innovative approach to viticulture and winemaking technology. As a result of this in Jim barry purchased great vine growing land on the southern boundary of Coonawarra. It was formally the old Penola cricket ground, which first saw a ball bowled in anger and the flashing cover drives of the local champions in 1950. Sadly, the ground closed in 1996 and soon afterwards Jim Barry purchased the 30 acre property and planted a Cabernet Sauvignon vineyard. However, the original pavilion and pitch have been retained, thus preserving an important piece of Coonawarra sporting history. Fruit from this vineyard, along with selected parcels of fruit from Jim Barry's other family owned Cabernet Sauvignon vineyards in the Clare Valley have been blended to produce a wine that is rich, soft and approachable. Fruit from the Clare Valley and Coonawarra have been used to produce a dark red coloured wine with ripe blackberry, mint and sweet oak aromas. The palate is rich and full bodied with ripe, sweet blackberry and mint flavours, while it shows firm, but finely grained tannins complemented by a lingering finish. (6 x 75 cl)
