Chateau Olivier Cru Classe Pessac Leognan
Description: Only one of six Chateaus allowed to produce both red and white wines under the Graves classification of 1959. The Chateau can be traced back as early as 12th Century, today the Chateau is owned by the Bethmann family and has been since 1886. 48 ha of vineyards are set on a variety of terroirs. Over 75% of the vines are red based grapes including 45% Merlot, 45% Cabernet Sauvignon and 10% Cabernet Franc, with an average vine age of 25 years. Chateau Oliver has adotped modern vinification techniques, temperature controlled fermentation in stainless steel tanks and a reverse osmosis concentrating machine. The wine is aged at least a year in oak barrels, of which 33% are new each vintage. The grand vin of Chateau Olivier, is made with consultation from Guy Guimbertreau who has produced a wine with a dark purple robe dominated by aromas of black berry fruit and spice box. Rich, with excellent purity, low acidity and ripe tannin in the long finish.
