Cordier is traditionally the last to harvest in Fuisse, additionally, he trains his vines for minimal production, and therefore maximum concentration (10 to 15 hectolitres per hectare is quite common. Once in the winery, fermentation is followed by over a year in Seguin-Moreau barrels and regular batonnage. Looking around the cave one can't fail to notice the impressive, large new oak barrels in which Christophe cultivates his extraordinary wines. The result, somehow, is that the wines always have the intensity and concentration to balance this oak treatment.
