Les Mauvarennes is one of five monopole or single vineyards owned by them in Mercurey. The family believe that 95% of the quality of wine comes from the fruit and so great care is taken both in the vineyard and winery. Pinot Noir grapes are vinified at low temperature in stainless steel before maturation in oak casks for at least 12 months. Filtration is kept to a minimum to retain as much flavour in the wine as possible.
