Description: Appellation: This appellation comprises 130ha of Premier Cru vineyards, which occupy two almost facing slopes at the mouth of a valley. 'Les Hauts Jarrons' is situated on the slope towards Beaune, which produces finer, more aromatic and 'feminine' wines than the Pernand-Vergelesses side. Viticulture: This wine is made from fruit from 50 year old vines and yields are controlled with stringent de-budding. Cluster thinning took place where necessary. No fertiliser was used on the vineyards. The soil was worked in order to encourage the microbacterial activity required for the terroir to express itself. The Harvest The grapes were hand picked at optimum maturity and put into small perforated boxes. Patriat has two sorting tables, with 10 people per table, looking for any grape that isn't fit to go into the fermenting vat. Vinification The grapes were destemmed and the whole, uncrushed berries were put into open wooden foudres. No yeasts, enzymes or tannins were added, to avoid altering the character of the must. The cold soak lasted for 5-6 days. Patriat doesn't plunge during this first week, as he thinks only bitter tannins are extracted at this stage. Once fermentation starts, the cap is plunged by foot . Maceration lasts for about three weeks, and malolactic happens ''when it happens''. Maturation The wine was matured in barrel for 16 months without racking . The wine is very lightly filtered before bottling. (6 x 75 cl) Price: £123.08

Description: With its prestigious Premiers Crus, Saint-Aubin in the Côte de Beaune holds a place among the great wines. No fewer than 65ha of its vineyards are rated as Premier Cru. The vines are mainly planted on the right side of the wide coomb that snakes its way up towards La Rochepot. The appellation area is spread over two different hill ranges: one is the Montagne de Savoie, which delimits the end of the Côte d'Or, and the other is the Montagne du Ban, which is perpendicular to it. It is on the second of these hills that 'Sur Gamay' sits. Patriat feels that wines from this lieu-dit are very close in quality to a Puligny or a Chassagne. Parcel-based selection and vineyard management was used. The vineyard soil was worked in order to encourage the microbacterial activity required for the terroir to express itself. The yield is 40 hl/ha. The grapes were hand picked at optimum maturity and put into small perforated boxes. Patriat has two sorting tables, with 10 people per table, looking out for any grapes that aren't fit to go into the fermenting vat. The wine was barrel fermented using natural yeasts . Patriat eschews battonage as he doesn't like the fatness it lends to wines, preferring instead to allow the inherent elegance and minerality of the wine to shine through unhindered. The malolactic fermentation took place in barrel. The wine was matured for 15 months and underwent a very light filtration before bottling. (6 x 75 cl) Price: £146.93

Description: Visual Aspect: A good, steady purple, with a few amber reflections. Nose: An attractive, complex, astonishing nose combining notes of fresh berry fruit with candied fruit notes. Palate: Good length, balanced between silky tannins and an evident fruitiness. Aging: This wine should be left in the cellar for 4-5 years to reveal its full potential, and may be aged for 15 years or more Location: valley. This yields two different types of wines: those from the hill on the Volnay side, and those born on the plunging slopes descending towards Beaune. The Clos de Verger is situated on the latter side, resting on a mix of clay and limestone. This ground provides the wine with a solid attack in the mouth, but also great elegance at the finish.
