Keeping time This wine can be enjoyed one year after its bottling or be kept up to 5 years. Vinification methods Domaine Louis Moreau applies the traditionnal vinification style that has been always used in Chablis. This method is composed by two fermentations. Domaine Louis Moreau Chablis 1er Cru VAULIGNOT
Description: Tasting comments This wine is a typical example of a Chablis 1er Cru. Due to its exposition, the vineyard gets the morning sunlight, a cooler climate and derives its typicity from the mineral soil giving it the flinty, chalky mouth feel. The nose is discreet with hints of mint flowers and pineapple fruit. The mouth feel is well balanced, fresh with a long aftertaste yhanks to a nice acidity holding the wine together. Besides seafood, this wine will be perfect with saucy recipes and white meats. Vinification methods Domaine Louis Moreau applies the traditional vinification style that has been always used in Chablis. This method is composed by two fermentations followed by a rest period during winter on fine lees. Then comes the period for clarifying, cold stabilisation and, finally takes place a light filtration. No oak is used in our wines, neither for vinification nor ageing. (6 x 75 cl)

Description: Tasting comments : The terroir of Les Clos is the most well-known and qualitative of the Grands Crus. It gives wines which are generous, dry and powerful. The very mineral bouquet lets appear a very delicate and long finish. The Grand Cru Les Clos can be drunk with a poularde with morels or with all other white saucy meat accompanied by wood mushrooms. Vinification methods : Louis MOREAU respectful of the tradition, uses the traditionnal way to vinify his Grands Crus. He applies the method which has been always used in Chablis, which is composed by 2 fermentations followed by a rest period during winter on fine lees. Due to the power and the complexity of this wine, Louis MOREAU ages it in French oak barrel during 2 months. This lightly barrel-ageing doesn't mask the wine and gives it more deepness and roundness which will enhance its character. (6 x 75 cl)

Description: The village of Pommard is comfortably sandwiched between the town of Beaune and the commune of Volnay. In contrast to the wines of its close neighbours, those of Pommard tend to be fuller, more tannic and expansive in the mouth, similar to those of the Côte de Nuits. The Epenots is solid and firm in its youth and needs time to mature and mellow out before revealing its full glory. It is intense and spicy with a distinct truffle bouquet and a flavourful richness. The 1998 Pommard 1er Cru vintage has a concentrated deep red robe and the palate is a reflection of the concentrated fruity aromas. The wine has a lingering finish and a good length. (12 x 75 cl)

Keeping time : As it stays perfumed with notes of peaches and apricots, it can be drunk young if you look for this vividness. In aging, it takes all its charm and becomes fruitier, full-bodied and powerful. Vinification methods : Traditional method used in Chablis, composed by two fermentations, calrifying, fining and the cold stabilization. Then there is a light filtration.
