Santa Emiliana ANDES PEAKS Cabernet Sauvignon Rapel Valley Chile
Description: Lots of typical, Chilean Cabernet varietal character showing fresh tart black- and redcurrants on the nose with leafy, red pepper undertones; quite soft and fruity but with some depth and structure as lightly dry tannins complete the finish. The Cabernet Sauvignon grapes are both hand- and machine-harvested from simple and lyre trellised vines in the Rapel Valley, planted in aluvial soils. Fermentation in stainless steel tanks at temperatures controlled below 30 degrees for 7 to 10 days, with post-fermentation maceration on the skins for about the same amount of time to extract sufficient colour and tannins. No wood ageing. (12 x 75 cl)
