Description: The Tormaresca estate is owned by the ancient Antinori family who have lived in Florence since the early 13th century when they moved from Calenzano, a small town between Florence and Prato, where their presence was recorded back in 1188. Wine is part of the family history and as early as 1385 Giovanni di Piero Antinori registered with the Guild of Winemakers. The Tormaresca estate was purchased in 1998 and is composed of two properties: one is called Bocca di Lupo in Minervino Murge a 100 hectare estate located in the Castel del Monte D.O.C. region, 40 miles from the Adriatic Sea. The other is called Masseria Maime, 500 hectare , closer to the sea in the Salento DOC region. The wine are produced in the new cellar located in the Bocca di Lupo estate. First the grapes are harvested when ripening begins. After pressing, fermentation is followed by maceration lasting 20 days in stainless steel tanks. During this phase the must completes its alcoholic fermentation at a temperature between 28º and 32º C. After the pressing and the maceration the wine will have completed the malolactic fermentation in barriques, made of french and hungarian oak, where is aged for 12 months. Finally, the wine is then aged in bottles for a further 10 months before being released. This has produced a ruby red coloured wine with the typical varietal aroma of red fruits and hints of prune that combine well with the wood notes. Description: Bush vine dry land Primitivo was hand picked for minimal maceration and at optimum maturity. The grapes were received and fermented in closed containers using naturally selected yeasts with a period of cold maceration prior to the onset of primary ferment. On completion of fermentation about 20% of the wine was transferred to one-year-old French and American oak hogsheads and matured in rotation for six months. Description: Winemaker's note: it has a deep ruby colour with flecks of strawberry-fuchsia when it's young. On the palate it has scents of wild blackberry and raspberry together with hints of violets, chocolate, tobacco and spices. Primitivo has a great structure and softness. Aging: about a third of the wine is aged in two year old, small French barrique for four months, the remaining in stainless steel tanks. Then for three months in the bottle. The wine is then slightly filtered and separated from the residual yeasts and sediments, before bottling. About Primitivo: Primitivo and Zinfandel have the same DNA, therefore the European Community allows the producers to label the wine with either name on the labels. It's unknown how the varietal arrived to Apulia, some think it came from Croatia, others think from Portugal or France. The best conditions to grow Primitivo are in the Salento peninsula . The wind that blows in the Peninsula keeps the vines healthy and prevents the formation of mould. The high alcohol content, the intense fruity flavours make this varietal very appealing. The Primitivo is cultivated in Apulia in two areas with quite different terroir that give to the wine different characteristics. At the south end of the region, in the sunny and flat Salento peninsula on the Ionian See the variety shows the maximum character and body in the areas of Sava and Manduria. On the Murgia hills in the area of Gioia del Colle in central Apulia, the altitude and the cooler climate give the Primitivo more elegance and finesse. Soil Structure: calcareous-argillaceous soil with an altitude of 40-50 mt and stony hills at 300-350 mt. . Trainig System: bush-trained. Harvest period: first week of September and last week of September . Vinification: after pressing, the maceration takes place in stainless steel vats for 10-15 days at the controlled temperature of 28ºC. Description: A blend of 45% Primitivo, 45% Negroamaro and 10% Malvasia Nera, is supple and juicy, conveying in a glass the instant warmth of Salento. The Rosso Salento has good colour and a chunky fruit with notes of plum and raspberry. Following cool fermentation to preserve and enhance the fruit flavours, the wine is matured in French oak to give a subtle spicy oak character together with a measure of complexity and elegance on the palate. The Promessa wines are created by Mark Shannon and Elvezia Sbalchiero, the duo behind A Mano. They have both worked in the wine business for most of their lives. Elvezia is a northern Italian wine-marketing expert and Mark is a Californian winemaker. With Promessa, Mark seeks to capture the pure flavours of Puglia's grapes in the bottle.

About Negroamaro: Negroamaro is an ancient variety, which has dominated the vineyards of the southern part of Apulia since the 6th century BC. The name comes from dialect, meaning black-bitter, although it doesn't taste bitter at all. About 37,000 hectares of vineyards are planted with Negroamaro in Apulia. Growers like it because it is resistant to draught and diseases and is capable of producing a considerable quality of wine. In all of Apulia however, Negroamaro performs the best in the Salento region, spanning from Taranto to Brindisi to Lecce up to the eastern city of Otranto. It's generally blended with Malvasia Nera, Sangiovese and Montepulciano. It can best express on its own, and can be a great rival of the better know Primitivo. (6 x 75 cl) Price: £52.35
