Yalumba NOBLE PICK Botrytis Semillon Eden Valley South Australia
Description: Dewy mornings, soft mists and the gentle warmth of the autumn sun on ripening grapes. Difficult conditions to fulfill but essential for the development of botrytis cinerea or noble rot; the essence of some of the great sweet wines of the world. Only when conditions are exactly right will bortrytis appear to cast its spell and, like nature's alchemist, turn the ordinary into gold. Semillon is the classic grape of Sauternes, its thick skin endowing it with a natural propensity to botrytis. The Yalumba Noble Pick Semillon is luscious and complex, with layers of lavender, honey, spice and marmalade-flavours. Made from the classic Sauterne variety of Semillon, the grapes stayed ripe on the vines until mid April when rains and dewy mornings initiated a good even botrytis infection. The following warm sunny days were perfect for its development and near-100% cover of the grapes. The Botrytis Semillon shows apricots, fresh lemons and orange peel, with a touch of passionfruit on the nose. The palate is long and luscious, with flavours of apricots, lavender, honey, spice and marmalade. The finish is fresh with long lingering flavours.
