Description: Thirty six months on yeast lees prior to disgorging has provided savoury, toasty aromas to compliment the fruitier flavours more often found in Marlborough Methode Champenoise. Natural lively acids have mellowed during the bottle ageing process resulting in a balanced, softer and more rounded sensation. The grapes were hand harvested and whole bunch pressed as a true Cuvée, to a maximum of 500 litres per tonne. The primary ferment was conducted by Prix de Mousse yeast in a 50/50 mix of stainless steel tanks and aged French oak barriques. At the end of the alcoholic fermentation the barrels were inoculated for malo-lactic fermentation. Blending from the barrels was carried out in January 1998 and the wine was then bottled, where it remained sur lies until being disgorged in March . (12 x 75 cl) Price: £224.69
