A highly regarded 950-acre estate in the Salentino plain of southern Italy's Puglia region, Candido features 462 acres of vineyard. It is owned and managed by Alessandro and Giacomo Candido, sons of the founder with support from Consulting Enologist Severino Garofano who plays an instrumental role at the property. Affectionately known as the Prince of Southern Italian Winemaking, Garofano is Italy's top authority on the grape varieties of Italy's south and a champion of southern Italian winemaking. Made Exclusively from Aleatico, the crushed grapes are macerated at a controled temperature. The fermentation is interrupted by repeated racking to remove the yeasts and the wine is subsequently matured in cask. A semi-aromatic wine with an aroma pleasantly reminiscent of Muscat, broad, rich, penetrating and showing maturity on the nose. Crimson in colour developing hints of amber with maturity. Rich, medium sweet dessert wine with a good acid backbone, velvety and delicious. (9 x 50 cl)
