Skillful blended with the combination of warm and cool climate areas has produced a wine with a deep red/purple colour, and exceptional fruit characters have been created including plum, raspberry and mulberry. Petit Verdot is a unique red variety that thrives in the warmer regions of Australia, and in particular the Riverland area of SouthAustralia. Originally from the cool Bordeaux region of France, this late harvest variety struggles to ripen in its homeland. However, KingstonEstate has extensive plantings of Petit Verdot growing in selected deep sandy soils on limestone adjacent to the winery where the grapes consequently reach full ripeness and intensity. Great care is taken from the vineyard to the winery where the Petit Verdot grapes were harvested at night and transported to the winery it is then immediately crushed and fermentation begun. On completion of fermentation the wine was matured with French and American oak before final blending and preparation for bottling. The wine is a deep red colour with a bouquet of violets, blueberries, plums and spices reminiscent of a Christmas cake. These flavours continue onto the palate with the spice characters of clove, cinnamon and vanilla well integrated with vibrant cherry fruit flavours. The palate is medium to full bodied with generous fruit and rich tannins. The fruit retains a vibrancy of wild flowers and berry flavours with a wonderful length of flavour. Sarantos, named after one of KingstonEstate owners is an easy drinking range of wines. Using only the best quality fruit and adopting the practice of soft pressing so that only free run juice is used in the winemaking process. This has resulted in a range of wines showing full fruit characters. This is a rich and warming wine style with infinite drinkability. Grapes were selected from vineyards throughout SouthAustralia including the Clare Valley, Adelaide Plains and the Riverland. Parcels of fruit which showed generous fruit concentration were identified and treated in the Soft Press winemaking style. After crushing the grape skins were handled gently to maximize the variety's pure and clean flavours during the ensuing fermentation process. Only a small portion of the wine was matured with American and French oak with the intention being to allow maximum fruit expression and the oak adding subtle complexity. The Sarantos Shiraz is a deep plum red colour while on the nose it has rich licorice, chocolate, plums, dark berry fruits and subtle spiciness and is very much like a warm Christmas fruit pudding. These attractive flavours continue onto the palate and are fused with soft charry characters and maraschino cherries. Sourced from various SouthAustralian premium regions, the wines are assessed not only for their youthful qualities, but an ability to develop their full potential with further bottle maturation. The Petit Verdot grapes were sourced predominantly from SouthAustralia 's Riverland with a small portion included from the Clare Valley and Langhorne Creek. Petit Verdot is particularly well suited to the Riverland 's warm climate where it ripens fully each year, yet retains lean tannins and good natural acidity. Once harvested only the light pressings were combined with the free run juice to produce this wine. The wines were left to settle for 7-14 days and then 75% was racked to new ,one year old and older American and French oak barrels for 12 months maturation. This is a bright red/purple coloured wine with good depth, while the bouquet is complex with subtle vanillin and spicy oak Characters. Opulent and lingering with intense blueberry and violets layered with spicy oak characters over a silky tannin backbone. The grapes for this wine were sourced from selected vineyards along the Limestone Coast and Adelaide Hills, cool-climate regions ideally suited to Sauvignon Blanc. Only the free-run juice was used to minimize phenolic content and fermentation temperature was carefully controlled to ensure maximum retention of varietal characters. This has produced a pale yellow coloured wine with green tinges, the nose is unmistakably Sauvignon Blanc with pungent herbaceous fruit characters of tomato leaves, lantana and capsicum. The herbaceous characters continue onto the palate where they are complexed by pineapple and passion fruit, tropical fruit flavours. A racy acid backbone gives this wine a lip-smacking finish. The fruit was harvested during the cool night temperatures to retain fruit freshness and minimize oxidation. The grapes were then crushed, chilled, pressed and inoculated with premium yeast. The fermenting juice was transferred to 80%French and 20% American new and old hogs heads. It was then allowed to mature on oak with regular lees stirring for 12 months with 10% undergoing malolactic fermentation. Individual barrels were selected for their flavour intensity and complexity, and mouthfeel characteristics. A brilliant, straw yellow coloured wine with youthful green hues. The bouquet is showing lifted tropical fruit over aromas of coconut and apricots. There are plenty of fruity flavours with layers of attractive peach, grapefruit and melon fruits well integrated with the creamy vanilla barrel ferment characters. The wine was produced from 100%SouthAustralian fruit including Adelaide Plains , Clare Valley , Langhorne Creek and Limestone Coast . The fruit was fermented as separate components in 20t static fermenters. A portion of the wine was drained off to finish fermentation in new American oak barrels. Adelaide Plains and Clare Valley ferments were transferred to new American oak barrels for completion of fermentation. The remaining ferments were drained and pressed with light pressings combined with the free run juice.The wines were left to settle for 7 days and then racked to new and one year old American and French oak barrels for 18 months maturation. This has produced a bright, deep red coloured wine with youthful purple hues. The bouquet is full of complex fruit characters showing rich fruitcake, dark chocolate and licorice notes integrated with blackberry and mint, together with some spice and coffee oak flavours. Great flavour concentration, opulent mid palate fruit and fine ripe tannins make this is a wine to savour. The oak underpins the fruit and provides flavour complexity and structure to the wine. KingstonEstate WILDLIFE Merlot Riverland SouthAustralia Description: Sarantos and Constantina Moularadellis developed a small vineyard and founded KingstonEstate during the 1960s and 1970s, they brought the food-and-wine-loving traditions of their sun drenched Greek homeland to the equally sun-drenched Riverland district of SouthAustralia. The wine shows good depth, being medium red to red/purple in colour. On the nose there is abundant raspberry, cherry and plum jam characters. These continue onto the palate which is rich and warm with soft fleshy tannins, fresh berry fruit and a hint of sweet French oak. After crushing,the juice was fermented on skins with pumpovers daily to ensure maximum extraction of colour and flavour. The wine was matured with 75%French oak and 25%American oak. The fruit was picked at optimum ripeness and immediately crushed with total de-stemming. The must was pressed to steel tanks and left to cold settle overnight. Fermentation was carried out at a controlled temperature in steel and the wine was racked off the lees in order to maintain the fresh fruit character. Finally, it was bottled after cold stabilisation and filtering and ready to drink on release.
