Harvesting at full maturity in part by hand, the grapes, Merlot 75%, Cabernet Franc 20%, and 5% Cabernet Sauvignon, are sorted manually on a vibrated table. Description: This beautiful 19th Century white stone Chateau sits above a vast cool, barriques-adorned cellar. The estate, in the south west corner of Montagne St Emilion, is planted predominantly with Merlot but also includes 20% Cabernet Franc and 10% Cabernet Sauvignon. The average age of the vines is forty years old, harvest is predominantly manual and yields are kept to a minimum. Once fermented the wines rest in barriques, a quarter of which are new, for over a year. The wines are intense and terroir-driven, displaying at the same time, purity structure and individuality. Description: Chateau Clos Daviaud has a vineyard of 4 adjoining hectares located upon a clayey slope in the Montagne Saint-Emilion appellation. The vineyard is planted with 30 year old Merlot and Cabernet Franc vines. The parcels involved in this Les Cimes can only be found on the top of the hillside, offering an outstanding environment for growing and maturing the fruit. Once the hand harvested fruit are in the winery great care is taken and finally the wine will spend 8 to 12 months in 50% new oak / 50% in one-year old barrels, where micro-oxygenation, stirring of the lees and very few gentle rackings by gravity are undertaken. Given such ideal grapes, the vinification favours gentle extractions in order to make a full-bodied, balanced, powerful wine. Here, maturation in barrel brings hints of complexity without spoiling the wine's great expression of fruit. (12 x 75 cl)
