Description: The Cave de l'Aurore produces good quality, consistent Mâcon-Villages. The vineyards are situated around the village of Lugny, and benefit from a predominantly southern exposure. The wine is vinified and aged in stainless steel tanks, and retains a lovely delicate flavour on the palate. Pale gold coloured Chardonnay with a subtle nose of tropical fruit and refined oak. Jean-Claude Boisset Macon Blanc Villages AC
Description: 100% Chardonnay showing a sparkling, straw-yellow colour and very refined nose that is fresh, with notes of flowers and white fruits. In the mouth it is very dense while lemony characteristics are to the fore, supported by good acidity through to the finish. The grapes are harvested when ripe and collected in small ventilated crates and once in the winery 50% of the wine is barrel-aged with regular stirring of the lees, while the two fermentations – alcoholic and malolactic – take place. The other half of the wine is vat-aged, to retain the natural freshness of Macon wines. This process takes place over a 12 month period, with very light filtration prior to bottling to ensure that nothing is taken away from the wine’s intrinsic qualities. (6 x 75 cl)
