Overlooking the Gironde estuary at the entrance to Pauillac the vines of Lynch-Bages are located on the Bages plateau, on one of the finest gravelly rises in the appellation. The estate once belonged to the famous Lynch family, of Irish origin, and was acquired by Jean Charles Cazes in 1934. His grandson, Jean-Michael Cazes, restructured the estate in 1974 adding state of the art winemaking equipment, while keeping the former wooden vats as a reminder of the nineteenth century. The grapes are all hand picked and then carefully sorted before crushing. A very strict selection is made prior to blending and the wine is traditionally aged in oak barrels for 15 months before bottling. Garonne gravel. Chateau Lynch Bages 5eme Cru Classe Pauillac
Description: The Lynch-Bages estate is located just outside the city of Pauillac, overlooking the Gironde estuary, on one of the most beautiful gravelly outcrops in the appellation. The well-drained soil consists mainly of Garonne gravel. The sub-soil forms a solid, but fairly disjointed foundation, enabling the roots of old vines to grow to a depth of 6-8 metres. In 1974, Jean-Michel Cazes set about restructuring the estate. He equipped it with up-to-date technical facilities, but kept the old vat room dating from last century intact. It is now one of the Médoc's most unusual sights. The grapes are hand-picked and the wine is made in a vat room containing 35 stainless steel vats equipped with temperature control systems. Lynch-Bages made primarily from Cabernet-Sauvignon, is famous for its fine bouquet and rich tannin, which becomes soft and delicious with age. Lynch-Bages is powerful with a long aftertaste. It is typical of the greatest wines of Pauillac. The 1999 vintage is displaying a dense purple colour as well as low acidity. This blackberry and cassis-flavoured wine possesses a fat, juicy mid-section, and outstanding purity, ripeness, and glycerin in the long finish, which oozes over the palate with no bumps. Chateau Batailley 5eme Cru Classe Pauillac
Description: Chateau Batailley is classified as a 5eme Cru Classe, while the name Batailley is said to derive from a 'bataille' fought 600 years ago between the French and the English on the same spot as the present property. Today Chateau Batailley is owned by Emile Casteja of the famous negociants, Borie-Manoux. The estate covers 55 hectares with Cabernet Sauvignon, Merlot, Cabernet Franc and Petit Verdot grapes. The terrior is a based on a gravel bed, with clay and limestone subsoil. Vinification takes place in a mixture of oak, stainless steel, and cement vats, followed by 18 months maturation in oak barriques of which 50% are new. Chateau Pichon-Longueville Baron 2eme Cru Classe Pauillac
Description: There are only two Pauillac second growths as determined by the 1855 classification, the other being Chateau Pichon Lalande. The two properties were once, as their names might suggest, part of one estate. Chateau Pichon Baron does not seem to receive the same level of adulation as Chateau Pichon Lalande, but that is not to say the wines are in any way lacking. The chateau is part of the AXA Millésimes portfolio, and with Jean-Michel Cazes making the wine quality should indeed be high. AXA Millésimes has huge capability for investment and it is no surprise that there were many changes at Chateau Pichon Baron. The chai wasn't renovated, it was completely rebuilt, using a design by architects Patrick Dillon and Jean de Gastines. This came to be after the pair won a competition for the best design. The new buildings face each other across the fish pool in front of the chateau, and yet they are hardly noticeable as they are sunk into the ground. The cellars themselves extend beneath the pool in front of the chateau, the cool waters above helping to moderate the temperatures below. The chateau itself was renovated, although sadly it remains unoccupied. The result of this investment has been a heady rise in quality, and Pichon Baron now challenges Pichon Lalande where previously there was simply no competition. The vineyards are planted with Thegrape varieties planted consist of 70% Cabernet Sauvignon, 25% Merlot and 5% Cabernet Franc. Grapes are harvested by hand with some selection of grapes made in the field after with the berries are destemmed and fermented for 2 to 3 weeks in 40 heterogeneously sized vats temperature-controlled stainless-steel tanks at 28º to 30º. The quality of the pressed wine is graded A to C and usually constitutes 5% to 10% of the final blend.Malolactic fermentation occurs in the vat after which the wine is transferred to barrels for 15 to 18 months, 70% of which are new French oak, 30% one-year old, with racking every 3 months. A dark, classically styled, black fruit nose. Again a touch of roasted nuts. Lovely texture. A touch light but it has elegance. There are appropriate tannins which need a little time (12 x 75 cl)

Chateau Latour LES FORTS de LATOUR Pauillac OWC
Description: This second wine of Chateau Latour uses the grapes from the young vines of the Grand Enclos, which are less than 12 years old, and from the grapes grown on three plots situated outside the Grand Enclos. Ageing occurs, 50% in new barrels and 50% one vintage old barrels, for 18 months to produce a blend of 70% Cabernet, 30% Merlot grapes, the exact proportion of grape varieties will vary slightly from year to year depending on the quantity of demoted Grand Vin. The growing season started normally at the beginning of April, with a good show of flowers during a sunny period interspersed with a few storms. Summer was very dry and the grapes developed fast. At the end of July, green harvest was carried out. First signs of ripening were observed on 1 August. August and September were sunny with very little rain. At the end of September the grapes were very healthy and small, with very concentrated juices. Vintage started on 28 September in brilliant sunshine, which remained until the end on 10 October. The grapes were perfectly healthy and the musts were extraordinarily concentrated. One of Bordeaux's most concentrated rich and full-bodied wines. The wine is dark a ruby colour and has a unique bouquet of fresh walnuts, leather, and black currants. Available in the Original wooden case. (12 x 75 cl)

Moulin de Duhart has several characteristics similar to the fine wine, but with a lesser potential for ageing as its ageing in barrels is much shorter. Therefore it best consumed younger than its more robust counterpart. This wine is a blend of Cabernet Sauvignon 55 to 60% and Merlot 40 to 45%, spending 10 months in two year old oak barrels and that has produced a powerful and fruity wine.
