The positive impact that she made on the company lead it to be renamed Maison Veuve Devaux when she died. Today the House of Veuve A. Devaux is located in the magnificent setting of Domaine de Villeneuve and is part of co-operative that has some 800 growers contributing to the blends, making it the largest Champagne house in the region. Located in the Aube area of the Champagne region, Devaux has stayed true to its roots with the blends having a heavy leaning towards the softer Pinot Noir grape. This is reflected in the composition of the Champagne blend, made from 2/3 Pinot Noir and 1/3 Chardonnay while it exclusively uses only the first pressing of the grapes. This stylish cuvée is then aged for a minimum of 3 years in the cellars before release. This is a well-structured Champagne that has a pale yellow, almost clear colour with fine beade and a classical pinot noir aroma showing notes of flowers. Ideal ripening conditions produce grapes with balanced acidity and sugar levels, which, unlike non-vintage cuvees, do not need the addition of reserve wines from other years. Forget Brimont BRUT ROSE NonVintageChampagne Description: Today Michel Forget is the sixth generation to continue the wine-making tradition of the Forget family. Louis Forget created his vineyard at the beginning of the XIX century. Then Eugène established the family label in 1920, with a production of just a hundred bottles. Today the 10 hectares Estate of Forget-Brimont is mainly located in the terroirs of Montagne de Reims, Mailly Champagne and Verzenay 'grands crus noirs' as well as Ludes and Rilly 'premier crus' at the heart of the pinot noir kingdom. When and as necessary, Michel Forget buys grand cru chardonnay for his blending, while 120 000 bottles leave the Forget cellars each year. Michel Forget blends his champagnes himself from three consecutive years, in order to ensure regularity and maintain the House style which is so appreciated by customers. The wine is stored in the Forget cellars 18 meters below ground level. The cellars excavated in chalk offer excellent conditions for the wine. The champagnes are aged there a minimum of two years. The vintagechampagnes are aged between three and ten years. This enables the wines to reach full maturity, and they can be served as soon as they leave our cellars. This Rose Champagne is a blend of 60 % Pinot Noir 20 %, Pinot Meunier and 20 % Chardonnay. The Rose colour comes from adding red Champagne wine to the reserve cuvee and through the delicate blending an intense and fruity bouquet is evident with ample mouth feel and great finish. Like Brut Yellow Label, Demi-Sec is a blend of several good years, but behind its white label is a very different wine, sweeter yet equally mature and balanced. Demi-Sec is a Champagne blended from wines of several good years, each one made of the grapes of Veuve Clicquot's legendary Premiers and Grands Crus. The blend comprises about 56% Pinot Noir, about 28% Chardonnay and about 16% Pinot Meunier. The glorious sweetness of Demi-Sec derives from a weighty dosage of sugar mixed with reserve wine. This is added during dégorgement, after the second fermentation, producing a more soft and supple balance but always retaining the freshness so essential in a sweet wine. The wine is bright and clear, a rich yellow colour with golden shades, with a persistent and delightful sparkle. On the nose it is rich and intense, dominated by nutty, spicy aromas- almonds, nougat, honey and ginger. It is of course sweet on the palate, but this is a refreshing sweetness, not in the least cloying. The taste is well balanced, reminiscent of plums and dried fruits. This finish is both soft and very smooth.
