Since the merger, considerable investments have been made to insure consistently high quality. The winery is implemented with the latest bottling equipment, temperature control systems and pneumatic presses. This wine is named for a varietal that was once found in Gravina but is now extinct. Documents from the 1700s mention a vine called Gravisano from wich very small amounts of a rich and sweet wine was made for special occasions and served with traditional almond biscotti. Today, the wine is made from 100% Malvasia bianca and after harvest the grapes are left to dry on staw mats for one month and then pressed softly and lightly macerated. Fermentation is carried out in small French barrels of Allier to produce a great dessert wine. (6 x 37.5 cl)
