Springfield Estate Methode Ancienne Chardonnay is in the ancient style of Burgundy, a technique with wild yeast and no fining/filtration rarely used in the new world. The result is a wine of distinctive and classical character. It will develop slowly and is made to last, we hope, a lifetime. Tropical fruit nuances layered by lime and cream carried through to a pallet of full warm creamy mouth-feel. A big wine with classical character. (6 x 75 cl)

Description: Sparkling red wines are a great Australian tradition, and along with other wineries Majella has kept the tradition alive with its very popular sparkling Shiraz. The Shiraz is barrel fermented for six months in American oak and then the wine then undertakes a secondary fermentation in the true 'methode champenoise'. Louis Bouillot PERLE DE NUIT Blanc de Noirs Cremant de Bourgogne
Description: Louis Bouillot became involved in the elaboration of Sparkling Burgundy wines according to the 'methode champenoise' in 1877, and has now become the specialist of top quality Cremant de Bourgogne. Today it is owned by Jean-Claude Boisset. Pinot Noir from Yonne area and Gamay from Maconnai are used to make this wine. Once in the winery it is naturally bottle fermented, using Method Traditionnelle, with at least 24 months of fermentation instead of the 9 months recommended by legislation. The result is a light yellow colored wine that evolves to gold yellow during maturation. The mouth is outstanding defined by its powerful structure, brought by the Pinot Noir, and good balance while the finish is both fruity and long. (6 x 75 cl)
