The grapes were selected from the Los Carneros American Viticultural Area , including 75% from our Huichica Hills Vineyard. One of the most temperamental grape varieties, Pinot Noir vines thrive in these the cool, windy rolling hills that span the southernmost tip of Napa and Sonoma Valleys, developing small crops of vibrantly flavored fruit. Extremely gentle handling through all phases of winemaking enabled Mondavi to bottle this wine without filtration after 10 months of barrel ageing. This has produced a deep red coloured wine with aromas of black cherry, rose, forest and warm spice complexity that fan out across the palate. The wine was handcrafted in the To Kalon Fermentation Cellar with traditional techniques, including hand-sorting of the clusters, gravity-flow movement of the must and wine, and fermentation in a traditional oak tank. The wine then undergoes Sixteen months of ageing in new French oak chateau barrels that added vanilla and toasty oak accents. To retain fully this wine's enormous depth, texture and length of finish, it was bottled without fining or filtration. Deep, intense dark fruit character, with mineral, violet and earthy truffle complexity, this wine is powerful yet elegant, with beautifully integrated firm, muscular tannins, promising long ageing potential. Representing the best of California wine growing regions, including the legendary Napa Valley, each of the wines offers unique qualities and characteristics. RobertMondavi have long recognized the distinctive vineyards of California's coast. For decades they have sourced fruit from coastal regions, and in 1994 introduced RobertMondavi Private Selection wines to exhibit the high quality and character of the coastal grapes and vineyards. Gentle handling of the grapes, must and wine captured the aromatic character and silky texture of this Merlot. After lightly crushing the grapes, the must was fermented in temperature controlled tanks until dry. Following fermentation, Mondavi kept the skins with the wine for a total of 24 days to naturally soften the tannins and develop varietal complexity. Malolactic fermentation enhanced the wine's roundness and depth. Finally the wine is aged two-thirds in small French and American oak barrels for 5 months to add a hint of oak complexity while retaining the focused fruit flavours. A lovely deep red coloured wine with aromas of dark forrest fruits. Smooth and silky the Merlot displays seductive layers of berry, plum, violet and spice character, culminating in an enjoyable velvety finish . (6 x 75 cl) Price: £64.16
