This family owned 950 acre estate is at the forefront of a small but influential cadre of progressive wineries bent on drawing international attention to the increasingly stylish, quality wines emerging from Italy's south. A highly regarded 950-acre estate in the Salentino plain of southern Italy's Puglia region, Candido features 462 acres of vineyard. It is owned and managed by Alessandro and Giacomo Candido, sons of the founder and consulting Enologist Severino Garofano who plays an instrumental role at the property. Affectionately known as the Prince of Southern Italian Winemaking, Garofano is Italy's top authority on the grape varieties of Italy's south and a champion of southern Italian winemaking. A blend of Chardonnay 60% and Sauvignon Blanc 40%, whole grapes are softly and carefully pressed, after which the must is fermented and aged in new oak for eight months. This wine is a Straw yellow colour shot with tinges of green. Very rich and complex on the nose featuring hints of vanilla and exotic fruits. A very rich and elegant wine with well integrated new oak, surprisingly fresh and fruity. (6 x 75 cl)

This is a blend of Negroamaro 80% with Montepulciano 20% and is the result of a long experimentation to obtain a modern style wine which nevertheless expresses its origins to the full. The must is fermented together with the skins for a protracted period, during which skins are constantly broken up and kept immersed in the must. Fermentation is activated with cultured yeasts and temperature controlled. After the malolactic fermentation the young wine is matured in barrique to obtain perfect integration of ali its aromas and flavours. A full, bright ruby coloured wine showing lightly amber at the rim. Very intense on the nose, clear and fragrant, it is enormously satisfying on the palate, combining warmth and austerity with a fine harmony of flavours ranging from roasted coffee beans, tobacco and spice and a fine, well integrated hint of new oak.
