The Baldes family has been making Cahors since 1830. The vineyards comprise 40 hectares of prime south-facing vineyard sites by Puy l'Eveque. This dessert wine is a gold colour with a fruit paste, quince paste nose accompanied by mineral and fruity notes. In the nouth it is lively, and nicely balanced, wrapped up in a smooth style. Description: The Bouachon family have maintained their stewardship of some of the finest wines in the Rhone since 1898. The vines from which this vintage is produced have been rigorously selected on the right bank of the Rhône, as high up as Gard, a soil on which the finest white wines of the Côtes du Rhône are produced. On these clay/limestone and red-clay, stony terraces, these grape varieties are found in abundance. The ''Rabassières'' take their name from Rabasse that means ''truffle'' in Provencal. Predominantly grenache blanc . The viognier can be clearly detected by the palate and contributes to the aromatic complexity of the wine. Vinification is traditional. Fermentation takes place at low temperatures for the optimum extraction of the primary aromas of the fruits. The cuvee is bottled after blending. Platinum gold robe with attractive green shades. First nose very mineral, with aromas of citrus, white flowers , and quincepaste. On the palate, the wine reveals a fine balance between fullness and a slight acidity, confirming flavours of quincepaste and crystallised fruits. Description: This is a modern Tokay, with a wonderful cleanliness of intense, apricoty fruit on the nose. On the palate, it is rich and sweet yet finishes dry with superb length. In the first step of aszu making, aszu berries are selected and picked directly from the bunches of the vine in several turns. Aszu berries are then collected in vats and crushed gently to make aszu paste. Aszu paste is subsequently added in measured quantities to a defined volume of must made of fresh berries or to base wine. Following a process of maceration , aszu berries are separated from the wine, which is then allowed to age for at least two years in wooden barrels and another one year in the bottle before sale. After selecting the bunches of Viura, these are subjected to a static film maceration to make the must flow, which is then separated at a controlled temperature, followed alcoholic fermentation, and finally the wine is bottled. Clean and brilliant, this is a wine with a greenish yellow colour and pearly nuances. The bouquet has a floral aroma, where hints of wild bush flowers mix with a background of peach and quince skin.
