Description: Among a wide range of small producers the Cazes brothers have emerged as the leading name in Rivesaltes. Their estate of over 350 acres enables them to produce a variety of wines, yet it is through their sweet wines that they have gained popularity. These, known as Vins Doux Naturels, are wines of great concentration where the natural sweetness of the grape has been preserved. 100% Grenache Noir, the fermentation is traditional in that it is in contact with the skins. It is temperature controlled to around 22 degrees C. Natural grape spirit is added at the beginning of this fermentation which goes on for 15 days, then the grapes are pressed, aged in enamelled tanks for one year before cold stabilisation, filtering and then bottling. Complex aromas of figs, plums and liquorice dominate the nose. The palate is medium bodied and richly concentrated, though still retaining an elegant style, with a creamy mouthfeel and bags of ripe prune and plum flavours. The finish is deliciously saturating and quite opulent. (6 x 75 cl)

Description: Among a wide range of small producers the Cazes brothers have emerged as the leading name in Rivesaltes. Their estate of over 350 acres enables them to produce a variety of wines, yet it is through their sweet wines that they have gained popularity. These, known as Vins Doux Naturels, are wines of great concentration where the natural sweetness of the grape has been preserved. The fermentation is interrupted with the addition of grape spirit, leaving the wine naturally rich in sugars as in other Vins Doux Naturels. This wine, however, was then aged in large old ‘fudres’ over many years. The older wood does not impart obviously oaky characteristics but allows oxygen to react with the wine making a traditional ‘rancio’ style wine. Over time a proportion of the wine in barrel evaporates and is not topped up, concentrating the flavours and allowing a higher proportion of contact with oxygen. The naturally ripe, ‘grapey’ characters associated with Vins Doux Naturels are given extra complexity and aged character from time in barrel, resulting in a serious mouthful of raisins, figs, honey and floral elements. The production of these sweet, fortified wines is almost a Roussillon exclusivity, since 90 per cent of France's Vins Doux Naturels come from the Pyrénées Orientales departement in which Roussillon is found. For centuries, they have been made according to the process of fortification, a process discovered in 1285 by Arnau de Vilanova: the fermentation of grape juice is arrested by adding a quantity of neutral alcohol to between 5 and 10 per cent of the total volume. In this way the wine retains a proportion of the sugars that occur naturally in the fruit. Fortification may take place earlier or later, according to whether a sweet or medium-sweet wine is required, providing that the regulations regarding final alcohol content, which must be between 15% and 18% by volume, are respected. Pale gold in colour with aromas of lime, grapefruit, tropical fruit and fennel. The palate is rounded, rich and sweet without being cloying as the honey and apricot fruit is balanced with a limey acidity that keeps it fresh through to the soft finish. (6 x 75 cl)
