Description: Jean-Marc Pillot has recently taken over from his father, Jean, at the family owned domaine. While able to draw on the experience and advice of his father he has made changes to the estate, including a new cave, that have propelled the domaine up the league of premiere producers of wine in Burgundy. Equally capable of producing great white or red wine the style is always intensely fruity, graceful, and precise. With white wines dominating the 10 hectare domaine the vineyard holdings are spread throughout the village of Chassagne with subsidiary parcels in Puligny, Santenay, and Remigny . The vines in most parcels are between 25 and 50 years old. Traditional viticultural practices are used in the vineyards where, Cordon de Royat and Guyot Simple pruning and training systems are employed. The whites are fermented 12 to 18 months in barrel, never using no more than 25% new wood so as not to overwhelm the intensity of fruit and sense of terroir specific to each wine. Bâtonnage is practiced to enrich the whites but is not exaggerated while the wines are manipulated as little as possible and are bottled unfiltered to preserve their purity. This 1er Cru wine comes from a vineyard below Ruchottes with a great clay and chalk terrior that is reflected in this lovely Chardonnay. The 2000 vintage is full of fat flavours wth an almost tannic grip. The lively finish gives expression to the butter, nut, and citrus flavours. (6 x 75 cl)

Chateau Mouton Rothschild 1er Cru Classe Pauillac
Description: Wonderfully rich and still holding back. Beautiful plum, toasted oak, berry and tobacco character. Firm with a full body. In 1855, when the original classification was made, it had to be satisfied with the top placing in the second crus. This was probably due to the fact that the property had been bought in a relatively neglected state by Baron Nathaniel de Rothschild two years before the classification took place. This meant he had no opportunity to make the estate and the vineyard respectable. Mouton was then no more than a farmhouse and it was not until 1880 that James Rothschild built the elegant dwelling now known as Petit-Mouton. The property continued in the family of Rothschild and Baron Philippe took over the running of the property in 1922. He was determined to raise Mouton to a premier grand cru. One of the first things that he did was to introduce mandatory chateau bottling (6 x 75 cl)

Based mainly in the Côte de Nuits, spread through the appellations of Nuit-St-Georges, Morey-St-Denis, Vosne Romanée and Chambolle Musigny, where it is planted with 90% Pinot Noir. In addition the Domaine have a small vineyard in the grand cru Clos de la Roche in Morey-St-Denis. The remaining 10% of grapes produced are evenly divided between Chardonnay and Aligote. Jean-Claude Boisset St Aubin 1er Cru Sur Gamay Unoaked Chardonnay
Description: With its prestigious Premiers Crus, Saint-Aubin in the Côte de Beaune holds a place among the great wines. No fewer than 65ha of its vineyards are rated as Premier Cru. The vines are mainly planted on the right side of the wide coomb that snakes its way up towards La Rochepot. The appellation area is spread over two different hill ranges: one is the Montagne de Savoie, which delimits the end of the Côte d'Or, and the other is the Montagne du Ban, which is perpendicular to it. It is on the second of these hills that 'Sur Gamay' sits. Patriat feels that wines from this lieu-dit are very close in quality to a Puligny or a Chassagne. Parcel-based selection and vineyard management was used. The vineyard soil was worked in order to encourage the microbacterial activity required for the terroir to express itself. The yield is 40 hl/ha. The grapes were hand picked at optimum maturity and put into small perforated boxes. Patriat has two sorting tables, with 10 people per table, looking out for any grapes that aren't fit to go into the fermenting vat. The wine was barrel fermented using natural yeasts . Patriat eschews battonage as he doesn't like the fatness it lends to wines, preferring instead to allow the inherent elegance and minerality of the wine to shine through unhindered. The malolactic fermentation took place in barrel. The wine was matured for 15 months and underwent a very light filtration before bottling. (6 x 75 cl)

Domaine Henri Gouges LES VAUCRAINS 1er Cru Nuits-Saint-Georges
Description: The Henri Gouges domain was established in Nuits Saint Georges at the very beginning of this century. Founded by Henri Gouges, it was subsequently developed by his two sons, Michel and Marcel. In the last 15 years Pierre and Christian, the grandsons, have carried on the traditions of the estate by continuing the quest for excellence in everything they do both in the vineyards and in the cellars, they produce wines considered to be the benchmark for Nuits. The wines are produced on 14.5 hectares of vineyards and includes holdings in 6 Nuits St. Georges 1er Crus. Uncompromising about quality and respectful of the typicity of the different vintages, the harvest is entirely destemmed and vinification takes place in lined cement vats for approximately fifteen days, depending on the vintage. After cuvaison, the wine is transferred to small oak barrels and after 18 months ageing in oak barrels, using a maximum of 20 % new oak in the final blending, the wines are fined with egg whites and given a light filtration before bottling.
