Chilean partner, Juan Fernando Waidele, was seduced by the charm of the town of Botalcura and its environs, and this is where the idea to build a winery started. Juan Fernando then met enologist Philippe Debrus, who had a strong desire to return to a hands-on approach to winemaking, a style he learned in his native France when he was young. The winery is named after the town it is based in, Botalcura, near Talca, about 3 hours south of Santiago, in the coastal mountain range that forms the Maule Valley. Additionally, the word Botalcura means Large Stone in Mapundungun, the language of the Mapuche people of southern Chile. The grapes are grown in the coastal climate of the Casablanca Valley which features morning fog that burns off by midday, hot afternoons, and soft ocean breezes in the early evening, which produce very cool nights throughout the growing season. The marked difference in daytime and night time temperatures favours the development of the characteristic aromas of the SauvignonBlanc variety. To complement the fruit grown on the company's own vineyards, grapes are sourced from the best areas of Chile, selecting those that fully express the intense, particular characteristics of the soils and climates from which they originate. Here great care is taken from hand picking the grapes only in the morning hours to keep fruit cool in the vine yard to winery where the wine remains in the stainless stell tanks and rests on fine lees around 4 months before being bottled. Pale yellow in colour with green reflections showing understated and elegant aromas that evoke white peaches and pears, as well as herbal notes including acacia and lavender. The palate has a lively entry, open and accessible with mouth-filling texture, a soft, subtle balance of acidity and tannins, leading into a broad but focused finish. (12 x 75 cl) Price: £92.58

This wine is from the Casablanca Valley vineyard, with its warm weather and pleasant coastal breezes, that cool the summer temperatures. This fantastic location offers the ideal conditions for slow ripening which allows grapes to develop and maintain their flavour and aroma. Located 80 Km from Santiago and close to the Pacific Ocean, this valley receives approximately 450 mm of rain during the winter months of May through September. The poor, finely-textured sandy alluvial soil retains very little moisture and produces low yields , resulting in high quality fruit with concentrated varietal characteristics. The best grapes from the vineyards are selected for this wine. Working closely with the grapes and vineyards over the years, Vina Ventisquero have come to understand and carefully manage this variety and are more than capable of creating a great SauvignonBlanc Gran Reserva. Vina Falernia SauvignonBlanc Elqui Valley Chile Description: A new winery founded in 1995 by Aldo Olivier Gramola in collaboration with Italian enologist Giorgio Flessati, Vina Falernia is located in the Elqui Valley between La Serena and Vicuna, 470 km to the north of Santiago and it is at present Chile's northernmost wine estate. With the majestic Andes as a backdrop, their peaks gleaming white all through the summer, the vineyards benefit from currents of cold air which descend from the high mountains at night. The soils in the vineyards are composed partly of rubble which has eroded from the Andes mountains and deposited by glaciers and wind, and partly of alluvial sand and silt deposited by the river. While stony, gravely soils are regarded as poor for most crops, their excellent drainage qualities make them perfect for wine growing. The winery is located in the Vicuna area and is equipped with state of the art technology, including sealed pneumatic press which, in addition to producing perfectly clear must by applying very low pressure, also enable Vina Falernia to cold macerate white grapes prior to pressing while stainless steel tanks are used for temperature controlled fermentation. The grapes were hand-picked into small bins, de-stemmed, crushed and cold macerate for 12 hours, them softly pressed. The juice was clarified, then fermented in stainless steel tanks or in French oak barrels at 16-18ºC of temperature. Ageing on the fine lees for 6 months and then blending before maturing in bottle. This 100% SauvignonBlanc is a brilliant yellow coloured wine. It is well balanced with notes of gooseberry and elderflower with lovely, crisp acidity. (12 x 75 cl) Price: £94.37
