Casa Santos Lima PALHA CANAS Tinto Estremadura
Description: The rolling hills north if Lisbon are home to some small Quintas that are applying themselves to the pursuit of high-quality winemaking. One of the more successful ventures is the property of Quinta da Boavista, where consulting enologist Jose Nieve Correira has championed the native grape varieties Periquita and Touriga Nacional over international varieties like Cabernet Sauvignon. In this wine, the soft touch of oak provides balance to a wine possessing rich fruit and moderate acidity. This flexible wine is a good choice for quiet nights by the fire, when having dinner delivered in seems to be the best course of action. (12 x 75 cl)

Antinori VIN SANTO TENUTE MARCHESE
Description: Taste: Amber in color with a honeysuckle nose and a full, rich combination of flavors. Sweet and complex, this wine is perfect with twice-baked biscotti such as cantuccini di Prato. Vinification: The grapes, which are exclusively from the three Antinori estates in Chianti Classico, are carefully selected and picked at various times during the harvest. Those picked during the earlier part of the harvest have higher acidity, while those picked later have a higher sugar content, ensuring a correct balance between sugar and acidity at the end of vinification.Once picked, the grapes are spread by hand on special straw mats in the appassitoio, a large, airy loft situated on the estate of Tignanello, and left to dry until the end of December, when they are pressed. The must is then transferred into traditional small, 50-200 liter oak casks known as caratelli, where a long, slow alcoholic fermentation takes place, which is interrupted when the wine reaches at 15/16 %vol. The wine then ages in the caratelli for about 3 years, undergoes a very light filtration, and is bottled. Alcohol: 16% vol. (6 x 50 cl)

Barone Ricasoli VIN SANTO Chianti Classico
Description: Castello di Brolio is one of the oldest wine producers in the world and is situated in the heart of the Chianti Classico region of Italy. Located in Gaiole in Chianti, it has one of the longest histories of any wine estate in the world, having produced wine since 1141. In 1993, Barone Francesco Ricasoli took back control of the estate, spending millions of dollars replanting vineyards and upgrading the cellars. Today, Brolio is again one of Tuscany's leading wine estates. Using the traditional method of vinification the Malvasia , Canaiolo and Sangiovese grapes selected are hung clusters and left to wither for approximately four months in a ventilated atmosphere. The must obtained is fermented slowly for approximately 2 years, and then aged a further 3 years in the barrel. This traditional method of making Vin Santo has produced a dessert wine with a beautiful deep golden colour with amber hues. The intense and fragrant bouquet leads to a full and lingering taste of almonds and raisins with a great finish. Available in half bottles. (6 x 37.5 cl)

Guicciardini Strozzi VIN SANTO San Gimignano
Description: Vin Santo is produced in limited quantities according to a very old traditional method. After careful selection of the malvasia, trebbiano and san colombano grapes, they are left to wither on rush matting until the following Junuary. The grapes are then pressed and the must is stored in small kegs where it is left to age for at least five years. The wine is usually drawn from the kegs during Easter and this is probably the origin of its name (12 x 75 cl)

Isole E Olena VIN SANTO Tuscany
Description: Paolo De Marchi has produced a blend of 65% Malvasia del Chianti and 35% Trebbiano. The grapes were dried for 3-5 months before pressing after which the must was racked into 'caratelli' where it fermented and aged for five years before bottling. The wine remained on the 'madre' or starter culture for the entire ageing/fermenting period, during which time it was neither racked nor filtered. At the end of the ageing period, the resulting wine comprises only 12-15% of the initial yield. Deep amber in colour. Intense, rich, nutty fruit on the nose, giving way to a similar intensity and concentration on the palate. With great balance and length, the Isole e Olena Vin Santo has a clean dry finish. The grapes are grown on the Isole e Olena estate which covers 45 hectares, of which 42 are planted with vines and 35 are in production. The vineyards are approximately 400 metres above sea level and face south-west. The oldest vines on the estate were planted in 1958 and the youngest in 1999. The name "Isole e Olena" was conceived in the 1950's when two adjoining estates, "Isole" and "Olena" were purchased by the De Marchi family and were combined to form one. The history of both estates dates back many hundreds of years, and the earliest documentation of the village of Olena as far back as the 12th Century. At the beginning of the 1950's, the De Marchi family began gradually phasing out the sharecropping system. New specialised vineyards were planted and the cellars were expanded. Today the Isole e Olena estate is run by Paolo De Marchi, his wife Marta and his children. Paolo comes from a family with three generations of winemaking experience in the northern part of Piemonte.
