When they reach the perfect grade of dryness they are pressed and fermented in warmed stainless steel tanks. The fermentation lasts for about 30 days and develops high alcohol contents. The wine is than aged in large oak casks for about three years. After bottling the wine refines for another 3 months. This treatment gives a rich, concentrated full-bodied style with silky mature fruit flavours and a long aftertaste.
