Cellaring: The cellaring potential of premium Hunter Valley semillon is well known. The Rothbury Estate Brokenback Semillon is a fine example of the variety, and with careful cellaring will continue to develop toasty and savoury characters with three to eight years of bottle age. Winemaking: After crushing and pressing the juice was chilled prior to being racked bright into a temperature-controlled tank for fermentation. Graham Beck Chardonnay Viognier Western Cape RSA
Description: TASTING NOTES Lemony, zesty tones from the Chardonnay, while the Viognier provides the aromas of dried peaches and apricots on the nose. An explosion of tropical flavours on the palate with a great zippy freshness and a lingering finish. VINEYARD: Selected Chardonnay vineyards in the Robertson area and the Viognier hails from Ladismith in the Klein Karoo. CELLAR TREATMENT: The two varieties were fermented separately. A small percentage of Chardonnay was fermented in staved stainless steel tanks to generate an added dimension of richness. The balance of the Chardonnay and all of the Viognier was barrel fermented in new and 2 nd fill French oak barrels. No malolactic fermentation took place. After fermentation the Chardonnay and Viognier was blended and went through protein- and cold stabilization. (12 x 75 cl)

Description: Eaglehawk Semillon Chardonnay is a youthful, vibrant light yellow in colour. On the nose, citrus and grassy notes typical of the Semillon are evident, with the Chardonnay contributing rich, peach, melon and tropical flavours. The palate is well balanced with lively varietal fruit flavours and a crisp refreshing finish. VITICULTURE Semillon and Chardonnay fruit has been sourced from premium winegrowing regions throughout South Eastern Australia for this wine. Fruit has been selected for its varietal flavours and structure to create this fresh, crisp easy drinking style. WINEMAKING Separate parcels of Semillon and Chardonnay were crushed and the juice chilled and settled to retain varietal flavour. The juice was then transferred to temperate controlled fermenting tanks. Following fermentation the winemaker reviewed the parcels of wine before blending. Description: This hand harvested blend of Sauvignon Blanc and Semillon comes from selected vineyards of the Central Valley. Once in the winery this white wine spends 2 months in stainless steel at 15°C, with batonage and wine maker Adolfo Hurtado considered: 'A dual varietal white wine, this blend of Sauvignon Blanc and Semillon is vibrant and has a fruity style. Bright and crisp yellow-green colour, this fresh wine brings together two very complementary varieties. Citrus fruit and peach cues from the Semillon are supplemented by delicate undertones of white flowers and the slight herbal zest from the Sauvignon. Clique Chardonnay Viognier Minervois
Description: This wine is a blend of 55% Chardonnay and 45% Viognier that is showing a pale straw colour with an inviting, elegant nose of tropical fruits as well as a lovely hint of jasmine culminating in a long and rich palate that ends with a zesty citrus finish. The mature vines of the Chardonnay bring a solid palate structure dominated by ripe pear flavours, married with the aromatic flavours of peaches and lychees from the ripe Viognier fruit. All the fruit is sourced from the Minervois in the South West of the Languedoc region, Southern France. The Chardonnay comes from older, low yielding vines on the lower slopes of the Montagnes Noires, while small vineyards on the banks of the River Aude are the source for the Viognier. Here soils with high clay content produce vigorous young vines, with regular thinning of the foliage so that the open canopy allows maximum ripening and intensity of flavour. The fruit is harvested in the early hours of the morning when temperatures are coolest to ensure capturing maximum floral fruit characters of the Viognier grape. Both Viognier and Chardonnay are allowed to remain on their skins for 4 to 6 hours after crushing to achieve a balance of palate structure and colour. Next they undergo a long, slow, cool fermentation, the Chardonnay with a traditional Burgundian yeast, while the young Viognier fruit is fermented with an aromatic yeast often used with Sauvignon Blanc.
