The Clearwater range represents the very best varietal single vineyard wines from Sherwood Estate's own vineyards in Waipara. This is very much a hand crafted range both in the vineyards and winery, here meticulous care is taken to ensure that the wine produced is of the highest quality and reflects each vineyard's unique characteristics or 'terroir'. The fruit was hand harvested and in the winery a gentle pressing was undertaken with the juice fermented and aged on lees for 10 months in French oak barriques . Following a light fining and filtration the wine was bottled. This Chardonnay is packed wuth tropical and stonefruit aromas on the nose. A richly concentrated white, benefiting from barrel fermentation in French oak it has a complex, nutty, mealy character in the mouth with a bright citrus fruit lift, it culminates in a long, concentrated finish with touches of mineral and honey. Matured on the lees to give this wine its wonderful complexity and character, this Chardonnay displays richness and concentration of flavour. The Clearwater Riesling is from selected fruit at the Whitestone and Weka Creek Vineyards in Waipara. The fruit was harvested in excellent condition and selecting only the free run juice, the Riesling was cool fermented for 21 days. After an extended yeast lees contact the wine was light fined and filtered prior to bottling. This Riesling displays both delicacy and finesse. This Sauvignon Blanc is produced from grapes grown on SherwoodEstate's Selmes Road and Hammerichs Road vineyards in Marlborough. After harvest, the grapes went to the winery where the freerun juice portion was selected for barrel fermentation and ageing. Next, the wine spent 10 months on lees prior to blending, fining and bottling. The ClearwaterVineyards Sauvignon Blanc displays ripe passionfruit aromas supported by touches of capsicum. The Pinot Noir grapes were selected from the Webbs Vineyard in Marlborough and the fruit was hand harvested before going into the winery. After crushing and destemming, the fruit was transferred to four tonne open top fermenters. Over the course of the fermentation the tanks were hand plunged 4-5 times daily. Following 21 days of skin contact the fruit was pressed prior to ageing for 11 months in French oak barriques. This Clearwater Vineyard Pinot Noir is made in a traditionally Burgundian manner and captures the true essence of the variety. The nose displays rich, red berry fruit aromas integrated with careful oak handling, while on the palate it is round and full with lovely texture, silky tannin structure, opulent mouthfeel and length showing savoury on the finish. The Pinot Noir grapes were selected from three of SherwoodEstates vineyard sites in Waiparaand where the fruit was hand harvested before going into the winery. After crushing and destemming, the fruit was transferred to four tonne open top fermenters, for a 7 day pre-fermentation cool soak. Yeast was then added to initiate the start of fermentation. Over the course of the fermentation the tanks were hand plunged 3 times daily. Following 15-19 days of skin contact the fruit was pressed and aged for 12 months in French oak barriques. This Clearwater Vineyard Pinot Noir is made in a traditionally Burgundian manner and captures the true essence of the variety.
