Aimé Sabon first established his cellar in 1973 and now owns a total of 50ha including 13ha in Châteauneuf-du-Pape. The best sites are planted on a mix of galet stones, sands and clay and provide exceptional fruit. Since taking over the winemaking from his father in 1991, Christophe Sabon has set this 45 hectare property on the road to becoming the Beaucastel of the future. Tiny yields from the old vines give great intensity of fruit, while the flavours are preserved by temperature control, and expertly sculpted by judicious us of barrique. Christophe’s talent is to express the brightness and intensity of the grape, and capture all the nuances of terroir. This is a blend of 50% Grenache, 20% Syrah, 15% Carignan, 10% Mourvedre and 5% Cinsault. Attractive black plum in colour with a nose offering gobs of jammy black fruits intermixed with a delicious spiciness. The body is equally full, vibrant and concentrated in this well structured, well made wine.

Description: Poggio Antico is located in Montalcino, a small town in Tuscany about fifty kilometers south of Siena. The earliest written records of the estate date from the beginning of the 19th century, when the present boundaries were marked. At that time, the estate consisted of woodland, grassland, and three stone houses. The development of Poggio Antico started in the late 1970s, when electricity was brought in, vineyards were planted, and construction of the wine cellar began. The estate was purchased in 1984 by current owners Giancarlo and Nuccia Gloder, originally from Milan, who had fallen in love with the wines of Montalcino and the unique geographical position of Poggio Antico. Altero was created in 1983 with the intention of making a more modern style of Brunello. Altero is a proprietary wine that is distinguished by being aged in 500-liter French oak tonneaux for a period of two years rather than for three years in the large new Slavonian oak barrels used for the traditional Brunello. Altero completes its ageing requirement by spending two years in the bottle before release. In 2000, sixteen years after the first release of Altero, the new regulations for Brunello confirmed the validity of this innovative alternative. In effect the formula for Altero anticipated the new trend for Brunello. Since its introduction Altero has received very favourable reviews and enjoyed great commercial success, so every year an increasing part of the crop is set aside for it. 100% Sangiovese, Altero is a deep and intense ruby red wine which shows great concentration. The bouquet is wide, very fruity, persistent and elegant while the taste is full, warm, and round with a complex structure and fine ripe tannins. Very smooth on the palate with a long enjoyable finish it is suited for long bottle ageing. (12 x 75 cl)

Description: The domaine of Chante Cigale encompasses 40ha along the left bank of the Rhone, between Orange and Sourgues, on a variety of soils which contain a high proportion of 'galets'. These are the large stones which warm up during the day, releasing their heat at night to ensure the grapes achieve maximum ripeness. Planting is predominantly Grenache with some Syrah and small percentages Mourvedre and Cinsault. Christian Favier's family have tended the estate for five generations and believe that respect for tradition is the best way to guarantee quality. The grapes that have been carefully sorted in the vineyards are brought to the cellars. There they are deposited on a conveyor belt that carefully carries them to the first procedure, the removal of the stems . After the grapes are de-stemmed, the grapes are then lightly crushed. This was done in the past days by foot treading. Now cylinders that one can adjust according to the size of the grapes carefully do the job. Thus the skins are simply popped open and never pulverised. The resulting issue of juice, skin, pulp, and pips, is gently pumped into the vats. The must starts to ferment thanks to the natural yeast present in the vineyard, or a cultured yeast being added to the must. The fermentation lasts on the average about five days. The wine remains in the vat in contact with the skins and pips for about ten days . The malolactic fermentation happens by itself thanks to natural lactic bacteria emanating from the vineyard and the cellar. These bacteria convert one of the natural acids known as malic into a less harsh one known as lactic acid. The malolactic fermentation lasts for about ten days. Next comes the blending, this step is very important to the assemblage of the wine. It consists of seeking out among the different vats of the vintage those that qualify for making the Grand Vin. By evaporation, elimination, or absorption by the wood, about 15% of the harvest will be lost during the two to two and a half years that the wine is kept in cask. Deep ruby in colour with a wonderful nose of spice and dark fruits this is a real winter warmer. The palate is rich and ripe with layers of fruit and spice supported by fine tannins. (6 x 75 cl)

Description: The Bouachon family have maintained their stewardship of some of the finest wines in the Rhone since 1898, the Châteauneuf du Pape is the jewel and the roots of Maison Bouachon, established more than a century ago in the papal summer residence. The vineyards are several kilometres to the north of Avignon, on the rocky, sun-scorched hills and terraces swept by the Mistral, is the celebrated vineyard of Châteauneuf du Pape, growing on ground covered in large limestone rocks. The Alpine diluvium have a heat-regulating effect, they store up the heat of the day and return it during the night, creating a well-known furnace effect. The Tiare du Pape meaning the crown of the Pope, originated in the higher terrain above Grès, where the abundance of rounded stones and the clay sub-soil combine to give the wine its structure, concentration and elegance. On this terrain, the 13 appellation grape varieties take on a specific maturity, giving the wines their mineral and stewed fruit flavours. From the different authorised vine varieties, 4 principle varieties are present, grenache , syrah , mourvèdre , and other typical vine varieties making up 3%, such as Counoise, terret noir, muscardin and vaccarèse. Selection of parcels, harvesting by hand, rigorous grape sorting and long traditional maceration periods are the key stages for preparing this vintage. Blending takes place in our cellars, and is the wine is then matured for several months. The has produced a wine with a deep robe, strong purple with amethyst shades. The nose is harmonious and complex, and the taste is fruity , full-bodied and warm, with the presence of the tannins. The finish of the wine develops into notes of mild spices. (6 x 75 cl)

Description: Poggio Antico is located in Montalcino, a small town in Tuscany about fifty kilometers south of Siena. As per the D.O.C.G. regulations, Brunello di Montalcino Riserva must be aged for a total of five years as opposed to four required for the regular Brunello, while the Brunello Riserva Poggio Antico is only produced in exceptional vintages. In those years the grapes from the oldest and lowest altitude vineyard are processed and aged separately. The Poggio Antico Riserva then spends three and a half years in wood; the first year of ageing takes place in 500-liter French tonneaux while the remaining ageing is in new Slavonian oak barrels. The wine is then bottle aged for one and a half years before release to complete the mandatory five years of total ageing. The result is a mature, round and complex wine. The rather limited production of Brunello Riserva usually averages 18,000 bottles and due to its characteristics, it is a wine for which further bottle aging is encouraged. The Riserva is an intense ruby red, with garnet hues. Its bouquet is usually evolved and austere, with hints of wild berries, leather, and roasted coffee. In the mouth it has a fully developed rich structure, and is very elegant and smooth thanks to its rich tannins. It is extremely well balanced and rounded, with a persistent silky finish.

Harvest is by hand and the grapes are transported in small wooden crates in order to reduce bruising. After de-stemming they are gently crushed in a pneumatic press and fermented at a cool, controlled temperature in stainless steel. Ageing is in barrels for 6 months, 25% of which are new, and batonnage is performed regularly. The nose is fresh, fruity and aromatic, with ripe tropical and dried fruit characteristics. The palate is medium bodied with a succulent texture, balanced alcohol and acidity and a great concentration of dried fruit flavours, such as apricot and peach, with a honeyed, silky finish. Only 5000 bottles made annually and therefore there is only limited availability. (6 x 75 cl)

A blend of 50% Merlot, 30% Syrah, 10% Grenache and 10% Cabernet Sauvignon this wine is a beautiful example of Southern French grape varieties; rich in colour with ripe, red fruit, well-married tannins and herbaceous, spicy flavours full of southern warmth. The average age of the vines is forty years old, harvest is predominantly manual and yields are kept to a minimum. Description: 100% unoaked Viura. Clean, fresh and attractive nose showing hints of ripe peach and pear. Ripe, round and almost creamy palate cut through with a refreshing streak of zesty acidity. This large, family-owned estate draws from 800 hectares of elevated hillside vineyards in some of the best zones of Rioja Baja. Thanks to a combination of the high quality of the grapes from these vineyards and modern vinification cellars, the young, unoaked wines are fresh and vibrant with good richness of fruit. Artesa Rioja Viura is made from 100% Viura grapes cultivated in vineyards in the Rioja Baja region of Spain. The vineyards are at an altitude of 400 metres above sea level and the Viura vines are, on average, 20 years old. 80% of the vines are trained in the trellis method and 20% are bush trained. The vineyards have clay stone soils with some sandy spots. The Viura grapes are crushed and chilled for several hours before temperature controlled fermentation is carried out . The wine is fined using bentonite and filtered before being bottled. (12 x 75 cl)
