Description: Harmonious elegance is the hallmark of this wine with its definite peaks of flavour and good length. Aged in American oak puncheons, the colour is brilliant crimson while the bouquet shows fresh spicy Shiraz fruit and hints of pepper. Lighter in structure than its sister Bin No 0, it is eminently drinkable now but, under good cellaring conditions, has the attributes to mature in the bottle for a number of years. Great with very hearty, robust spicy dishes or your more casual meal, such as herbed spicy Italian style sausages, lamb with olives or even grilled or roasted highly seasoned antipasta. Bin No 1 is produced entirely from Great Western Shiraz grown on our youngest vineyard, Salvation Hills situated 11 kilometres south of our historic vineyard, Concongella. Description: TASTING NOTES Lemony, zesty tones from the Chardonnay, while the Viognier provides the aromas of dried peaches and apricots on the nose. An explosion of tropical flavours on the palate with a great zippy freshness and a lingering finish. VINEYARD: Selected Chardonnay vineyards in the Robertson area and the Viognier hails from Ladismith in the Klein Karoo. CELLAR TREATMENT: The two varieties were fermented separately. A small percentage of Chardonnay was fermented in staved stainless steel tanks to generate an added dimension of richness. The balance of the Chardonnay and all of the Viognier was barrel fermented in new and 2 nd fill French oak barrels. No malolactic fermentation took place. After fermentation the Chardonnay and Viognier was blended and went through protein- and cold stabilization. (12 x 75 cl)

Description: Classical Cabernet Sauvignon parcels were selected from Frankland River and Mt Barker vineyards. Gravely loam soils and 30 year old vines produced fruit of intensity and power. Minimal handling of the wine in every aspect of its development has enhanced the fruit complexity. Maturation for 20 months in 70% new and 30% 2 year old French oak was then followed by bottle maturation prior to release. Houghton Jack Mann is a fragrant and lifted wine with cassis, mulberry and bay leaf aromas, given further complexity by spicy oak, cinnamon and nutmeg characters. The qualities found in the bouquet are reflected on a finely structured and well balanced palate, while a soft velvety texture and sweet tannins complete this distinguished wine. Description: This wine comes from the Western Cape is the only area in the world where Rooibos tea, known since the time of the San for its medicinal properties, can be cultivated. It seemed only natural to combine the South African sun with ripe locally called Hanepoot grapes on a bed of organic Rooibos tea. During the drying of the grapes on straw and Rooibos tea, the fragrance of the Rooibos has infused the grapes. Next gathered the grapes are put through the crusher and destemmer. Next the fruit is soaked in its own juice, at low temperature, to re-hydrate the more raisined berries. The mash was then pressed and is being fermented in barrels until the yeast can go no further. Stellar Winery is situated 275 km north of Cape Town on the road to Namibia. The winery makes use of a semi-arid climate, unrivalled refrigeration capacity and extensive in-house engineering skills to produce modern, Fairtrade organic wines. Stellar Winery was the first organic vineyard and cellar operation to receive the highly sought after Fairtrade accreditation. Fairtrade companies undertake to empower economically disadvantaged workers and ensure that a fair price is paid for the product along the whole supply chain. Stellar Winery undertakes a big commitment with both farm and cellar staff transported to and from work, while families receive health care and the permanent services of a community worker. Workers receive free housing, electricity and water as well as subsidised schooling and child-care facilities. Finally, a percentage of the wholesale price of the wine is paid directly back to the Stellar Fairtrade Workers' Trust. The wine is made in the sparsely populated Namaqualand region and does not suffer the light pollution that plagues urban areas around the world. The dark nights and clean air result in a breathtaking cosmic display with the aptly-named Milky Way at its centre and the producer pays homage to this phenomenon with the Stellar Range. The wines are assembled from different farms, ferments and yeasts. Each wine in the blend starts with deep colour and ripe fruit and tannins. Individual nuances arise from organic agriculture, saline irrigation water, cooling afternoon winds, wild ferments and other still-to-be-discovered influences. Lightly wooded for structure rather than flavour, these wines offer a tasting experience that will provide a convincing argument for the ascendancy of organic over conventional wines.
