This family owned 950 acre estate is at the forefront of a small but influential cadre of progressive wineries bent on drawing international attention to the increasingly stylish, quality wines emerging from Italy's south. A highly regarded 950-acre estate in the Salentino plain of southern Italy's Puglia region, Candido features 462 acres of vineyard and is owned and managed by Alessandro and Giacomo Candido, sons of the founder and consulting Enologist Severino Garofano also plays an instrumental role at the property. Affectionately known as the Prince of Southern Italian Winemaking, Garofano is Italy's top authority on the grape varieties of Italy's south and a champion of southern Italian winemaking. Candido's estate-grown and -bottled Salice Salentino DOC blends 95% Negroamaro and 5% Malvasia Nera grapes harvested from low-yielding 30-year-old vines. Description: Noe Apollonio founded the company in 1870 and now Marcello and Massimiliano Apollonio are the fourth generation of the Apollonio family to carry on the family business. Today, great care is taken in the production and vinification of local grape varieties to produce wines of uniquely southern Italian character. Powerful and complex, the wines have flavours of ripe, dark fruits and leather, attractive weight, richness and balanced tannin. The grapes are harvested by hand before going into the winery where, after fermentation, it spends 6 months in French and Russian barrels and 6 month in bottle before being released. This wine is a blend of 80% Negramaro, 10% Malvasia nera di Lecce, and 10% Malvasia nera di Brindisi. It is a Ruby-red colour showing full and rich complex flavours of baked fruits and soft tannin. Description: The Cantina due Palme is situated in the Apolian town of Cellino San Marco in the centre of the Salento region of Southern Italy. Here, the hand picked Malvasia and Negroamaro grapes were vinified separately and transferred to French Oak. After ageing 9 months the wine was bottle aged a further 4 months before release. Dark and earthy in colour this wine is showing damsons and dark chocolate on the nose. Surprisingly soft and ripe on the palate with layered black fruit and structured tannins this wine is complemented by its enjoyable finish. (12 x 75 cl)

Leone de Castris MAIANA Rosato Salice Salentino DOC Puglia
Description: This wine is from the Salice Salentino estate called Maiana. It is a blend of Negroamaro 90% Malvasia Nera of Lecce 10%. Harvested by hand great care is taken from the vineyard to the winery. Here the carefully selected grapes are macerated at a checked temperature of 25-27º C. for at least 10 days. Then a malolatic fermentation will follow and, finally, refinement in oak barrels for about 10 months before the wine is released. A ruby red coloured wine with garnet reflections upon ageing it has a vinous, intense and delicate bouquet. Dry harmonious with a velvety flavour this wine goes well with red meant. One of the oldest winery in Italy, founded in 1665 by duke Oronzo. He came into possession of as much as 5 thousand hectares, planted with new vines and olive trees and wheat. The destemmed and crushed berries are cold macerated for some 20 hours after which a part of the juice is drained off and fermented in stainless steel using cultured yeasts. Description: A blend of 45% Primitivo, 45% Negroamaro and 10% Malvasia Nera, is supple and juicy, conveying in a glass the instant warmth of Salento. The Rosso Salento has good colour and a chunky fruit with notes of plum and raspberry. Following cool fermentation to preserve and enhance the fruit flavours, the wine is matured in French oak to give a subtle spicy oak character together with a measure of complexity and elegance on the palate. The Promessa wines are created by Mark Shannon and Elvezia Sbalchiero, the duo behind A Mano. They have both worked in the wine business for most of their lives. Elvezia is a northern Italian wine-marketing expert and Mark is a Californian winemaker. With Promessa, Mark seeks to capture the pure flavours of Puglia's grapes in the bottle.
