The name Paulinshof derives from the St Paul’s church in Trier which owned vast areas of vineyards in the Mosel as far back as 936. Since 1969 Weingut Paulinshof has been managed by Klaus and Christa Jungling who make a fresh, perfectly balanced wine from the top class riesling grape. Starting with 2 hectares the Junglings have expanded the vineyard area to almost 8 hectares, with the most recent parcel purchased in the famous Brauneberg area. The favourable southerly aspect of the Brauneberger vineyards and the iron and slate soils help produce wines with great elegance and finesse. Great quality with intense classic Riesling fruit character and the crisp acidity expected from the best of the Mosel.

Description: The grapes for this wine were harvested on 5/4/99 and 6/4/99 with an average of 21.4 brix and an acid level of 6.5g/l. Fermentation over 25 days at a cool 10 degrees Celsius to retain maximum natural fruit flavours, followed by a complete malolactic fermentation to add palate weight. Bottled from 10/8/99 to 11/8/99. The resulting wine has 12.5% alcohol, 14.5 grams per litre residual sugar and 6.8 grams per litre titratable acidity. The philosophy behind Grove Mill wines is that they are made to be the best they can be. Deliberate fruit orientation with a full bodied richness and concentration to the point of balance defines the style. Determining vineyards, selecting their fruit at harvest and keeping only the wines with the best structure, flavours and fragrances ensures the Grove Mill philosophy is exercised. Collavini BROY Bianco DOC Collio
Description: In 1896 Eugenio Collavini, the founder, first supplied to the best Udinese's families his wines without ever imagining that a century later they would reach the world over The grapes, carefully chosen amongst the over-ripened bunches, are gathered separately on special grid trays. Only the Tocai Friulano and the Chardonnay grapes are then concentrated in a modern temperature and humidity controlled fruit-cell. The Sauvignon grapes are gently pressed and the juice maintained at a low temperature in order to block fermentation. The pressing of Tocai Friulano and Chardonnay grapes then follows, before these three are then fermented together in small oak barrels from the Allier forest, that are perfectly aged and toasted. The wine is bottled and rests for further 3-4 months before release. The wine is a blend of Tocai Friulano, Chardonnay and Sauvignon Blanch and has a deep golden yellow colour with aromas of sweet acacia and vanilla that integrate well with the tropical fruit notes. Bodega Castano Monastrell DULCE Yecla Spain
Description: The wine is a deep, cherry-red in colour, with intense perfumes of spicy, raisined fruit on the nose. Candied peel, vanilla and cinnamon spices add a rich sheen to the voluptuous fruit palate. Ripe, chocolaty tannins and a clean acidity cut through the sweetness of the wine, preventing it from being cloying, and it is long and spicy on the finish. The well-ripened grapes are selected from our low-yielding, unirrigated vineyards. They are lightly crushed then followed by a long, cool maceration in order to slowly extract the colour intensity, aromas and the soft and sugary tannins of the Monastrell variety. The wine is aged in oak to add complexity. The Castano family has 410 hectares of vineyards in Yecla in south eastern Spain. Their wines have continued to improve steadily over the years and they now symbolise the best of what southern Spain has to offer: rich, warm climate wines made from grapes grown at altitude and transformed into robustly modern wines. The grapes for this wine are grown in vineyards situated in Campo Arriba at an altitude of between 400 and 700 metres above sea level, representing 400 hectares in four different areas of Yecla. This area has a very different microclimate to the rest of the region, which is clearly continental. It has minimum temperatures of -10ºC in winter and up to 42ºC in summer. (6 x 50 cl)

The MOndavi Moscato d'Oro is made from the white Muscat Canelli grape which has an intensely perfumed character. There are only limited plantings of the delicate Muscat Canelli grape in Napa Valley and Mondavi selected these grapes entirely from our Wappo Hill Vineyard in the Stags Leap District American Viticulural Area . This region, located on the southeastern flank of Napa Valley, is renowned for its unique volcanic and gravelly loam soils. Mondavi tasted the Muscat Canelli grapes repeatedly in the vineyard to assess flavour development. When the grapes reached optimum maturity, they were immediately hand-harvested. Next the grapes were gently pressed in whole clusters in an enclosed membrane press to capture the grape's delicacy and minimize tannin extraction. Cold-fermentation of the juice took place in stainless steel tanks with a yeast strain selected to accentuate the variety's exotic floral character. Fermentation was stopped by chilling when there was still about 12.5%-unfermented sugar in the wine. This level of sweetness, balanced with crisp acidity, enhances the lush fruit flavours of Mondavi's Moscato d'Oro. Moscato d'Oro has aromatic notes of honeysuckle, ripe peach and citrus that weave through the silky, sweet flavours and crisp finish. (12 x 37.5 cl)

Description: The most important Austrian wine growing regions for botrytis sweet wines are around Neusiedlersee in the east of Austria. The best conditions for growth of the noble fungus 'botrytis cinerea' are a warm summer and a mild autumn as well as the moisture of mists rolling in from a nearby river or lake. A high mean temperature and the regulating effect of large water surfaces are added factors. Mists and showers trigger the fungus and, in the right temperatures, the spores can disseminate very quickly. The fungus penetrates the skin of the individual berries and causes them to dry out, concentrating other constituent elements, such as sugar and various acids, in the berry. At first, there will be individual 'botrytis nests' on the healthy berries, then the noble rot covers the entire bunch, causing the berries to shrivel like raisins. This wine presents as a sweet but crisp, clean and concentrated wine. It has depth and power, it's sweetness is balanced by enough lively acids. Franz Haas MOSCATO ROSA Montagna
Description: The Moscato Rosa from Franz Haas has a deep cherry pink colour. In youth, it has intense perfumes of roses and cloves which change into faded roses and redberry fruits with age. The wine is very complex and smooth on the palate. Moscato Rosa is best drunk as an aperitif or an after dinner wine and will improve with age. It is perhaps one of Italy’s most sought after sweet wines. The Moscato Rosa is vinified as a red wine, with maceration on the skins to extract more colour. Fermentation takes place in temperature-controlled stainless steel tanks and is stopped by reducing the temperature. After fermentation, it is racked into oak barrels where it matures for approximately 8-12 months depending on the vintage, followed by a period of six months in bottle before release. The Haas family have been growers in Montagna in the Province of Bolzano, Alto Adige for generations. It is only with Franz, however, the current proprietor, that they have begun to produce and bottle quality wines. The vineyards are primarily situated on and around the hilly slopes of Montagna at altitudes ranging from 250-800m above sea level. (12 x 37.5 cl)
