This Adelaide Hills Sauvignon Blanc from Shaw and Smith is made from 100% Adelaide Hills fruit, principally from their own Balhanna and Woodside vineyards. The result however, is an excellent wine. In the final blend, Mary chose to complement the green apple and crisp citrus of the Sauvignon Blanc with approximately nine-percent Semillon for depth, complexity, and fullness with slight amounts of Gewürztraminer for a floral and spice notes and Chenin Blanc for a peachy softness.
