TASTING NOTES A concentrated rich and full wine with flavours of spices, creamy dark fruit and a smoky undertone. The 1999 Shiraz was the Maiden vintage for Uiterwyk Wine Estate, and is the only Shiraz in South Africa made in true Northern Rhône tradition where 5% Viognier is added to develop a softer more fragrant style. IN THE VINEYARD The DeWaal Shiraz is produced from a 25-year-old vineyard grown on gravel and loam soil. This single vineyard only produced 200 cases. IN THE CELLAR The wine received 14 days maceration for optimum extract of flavours and colours from the skins. Maturation for 18 months in 40% new French barriques. (12 x 75 cl)

Description: TASTING NOTES The good integration of the wood and fruit in the wine offer tastes of wild berry, mint and typical smokey Shiraz flavours with a full after taste. IN THE VINEYARD Bovlei received the Shiraz grapes at optimum ripeness with a good concentration of flavours in the berries, which led to the typical Shiraz cultivar flavours. The Shiraz grapes came from one vineyard and yielded seven tons per hectare. The vineyard is trellised on an extended Perold System and drip irrigated. The vineyard is located on the lower part of Groenberg with a southwesterly slope. IN THE CELLAR The Shiraz grapes were handpicked at 25.5º Balling when it reached physiological ripeness. The grapes were crushed, destemmed and fermented on the skins for 8 days at 26º Celsius. After malolactic fermentation the wine was wood matured for 11 months in Hungarian oak barrels.
