Ridgeback Wines VANSHA Dry Red Paarl RSA
Description: TASTING NOTES Ripe yet restrained combo of black fruit with mulberries and strawberry jam on midpalate. Pleasantly understated smooth tannins for easy quaffability. IN THE VINEYARD Grapes from the Vansha vineyard combined with a selectively chosen variety from the Paarl region. THE HARVEST All of the above varietals were handpicked at optimal ripeness of physiological and flavour ripeness. IN THE CELLAR All of the grapes were destemmed without crushing. Wholeberry component was 80% in the fermenters. Cinsaut and Cabernet Sauvignon was fermented in stainless steel and pumped over twice daily. Shiraz was fermented in half ton fermenters and punched down three times daily. The blend was made up and consolidated, just the Cabernet and Cinsaut components completed alcoholic fermentation. Oak staves were induced just prior to fermentation to allow for some mellow oak structure. The wine was lightly filtered just before bottling in May . (12 x 75 cl)

Ridgeback Wines VANSHA Dry White Paarl RSA
Description: TASTING NOTES Guavas, pear drops and lichees with some pineapple notes on midpalate. Full ripe midpalate with fresh, clean finish. Long linger of pears and melon. A classical, well structured wine with a complex concentration of fruit and flavour. IN THE VINEYARD Chosen from selected vineyards a complement to our Flagship wine Ridgeback. THE HARVEST Grapes were handpicked in February. Healthy fruit was selected at optimal flavour ripeness. IN THE CELLAR Destalked with no crusing directly to press. Juice was settled for 18 hours at 12ºC. Must was racked and then inoculated with local, commercial yeast strain. Fermentation lasted for 21 days at 12-14ºC. A small percentage of Sauvignon Blanc was blended. Wine was lightly filtered prior to bottling in May. (12 x 75 cl)

Description: A delicate combination of asparagus and green pepper flavours with touches of passion fruit and lime and a crisp. mineral finish. Fermented in stainless steel tanks at 15°C, after being racked and sulphured, kept on fine lees for two months. (12 x 75 cl)

Thandi FAIRTRADE Cabernet Sauvignon Merlot Elgin RSA
Description: A deep red colour with black currant fruit and roasted coffee bean flavours on the nose and a firm tannin structure on the finish. The Merlot was harvested in mid February and the Cabernet Sauvignon in Mid March. Fermentation on skins in stainless steel tanks for 5 days with regular pump overs, 3 times a day Fermented on skins until dry. After malolactic fermentation, 10% of the wine is transferred into second and third fill French oakbarrels for 8 months (12 x 75 cl)

Description: A deep red colour with black currant and roasted coffee-bean flavours on the nose and a firm tannin structure on the finish. Fermented on the skins until dry in stainless steel tanks. After malolactic fermentation, the wine is transferred to French oak barrels, where it is aged for 24 months. (12 x 75 cl)

Description: The wine is concentrated with well balanced fruit and oak showing aromas of citrus and orange blossom on the nose, with hints of vanilla on the palate. Skin contact was given before fermentation. Wine fermented in 30% new French oak barrels and was aged for a further eight months on the lees. (12 x 75 cl)

Description: This wine shows bright cherry fruit aromas and the silky tannins ensure a soft, mellow but lingering flavour on the palate. The whole fruit is givne a cold soak for four days before fermentation. After fermentation, 50% of the wine undergoes malolatic fermentation and then all the wine is transferrred to French oak barrels for a 10 month maturation (6 x 75 cl)

Moris Farms AVVOLTORE Tuscany
Description: Deep and brooding in colour with super sweet and expansive aromas of creme de cassis and tar. Its ripe, dense palate boasts power balanced by polished, supple tannins. 75% Sangiovese, 20% Cabernet Sauvignon & 5% Syrah. Only 500 cases produced. Fermentation in cement tanks then malolactic fermentation in new barriques, followed by an additional 1 years ageing. This, along with the 2000, received the Tre Bicchieri award from Gambero Rosso. The Moris family immigrated to Italy from Spain during the 1700's. Today the estate in Maremma has 76 hectares of vineyards. Adolfo Parentini has invested significantly over recent years including the completion of a new cellar and he has been well rewarded in the consequent improvements in quality. (6 x 75 cl)

Description: Rich in cherry fruits with a hint of almond and luscious soft fruit on the palate. 90% Sangiovese & 10% indigenous others. This Morellino vineyard has a north-west facing exposure on a sandy soil, rich in marine fossils. Vinified in cement tanks. The wine was bottled after 4 months without any time spent in wood. The Moris family immigrated to Italy from Spain during the 1700's. Today the estate in Maremma has 76 hectares of vineyards.
