Clique Chardonnay Viognier Minervois
Description: This wine is a blend of 55% Chardonnay and 45% Viognier that is showing a pale straw colour with an inviting, elegant nose of tropical fruits as well as a lovely hint of jasmine culminating in a long and rich palate that ends with a zesty citrus finish. The mature vines of the Chardonnay bring a solid palate structure dominated by ripe pear flavours, married with the aromatic flavours of peaches and lychees from the ripe Viognier fruit. All the fruit is sourced from the Minervois in the South West of the Languedoc region, Southern France. The Chardonnay comes from older, low yielding vines on the lower slopes of the Montagnes Noires, while small vineyards on the banks of the River Aude are the source for the Viognier. Here soils with high clay content produce vigorous young vines, with regular thinning of the foliage so that the open canopy allows maximum ripening and intensity of flavour. The fruit is harvested in the early hours of the morning when temperatures are coolest to ensure capturing maximum floral fruit characters of the Viognier grape. Both Viognier and Chardonnay are allowed to remain on their skins for 4 to 6 hours after crushing to achieve a balance of palate structure and colour. Next they undergo a long, slow, cool fermentation, the Chardonnay with a traditional Burgundian yeast, while the young Viognier fruit is fermented with an aromatic yeast often used with Sauvignon Blanc. Description: This wine is a blend of 60% Syrah and 40% Grenache is showing a deep brick red colour with purple hues and is brimming with the spicy varietal aromas of the Syrah on the nose. The palate is round, warm and rich with lifted cherry and strawberry fruit flavours complemented by soft tannins with pepper and paprika overtones. The fruit for this wine comes from carefully selected parcels of grapes in the Cote de Roussillon region in the extreme south of the Languedoc in Southern France. Grown on terraced old bush vine vineyards, on chalky 'Garrigue' soils, the vines are described by the locals as 'sleeping in the shade of the Pyrenees with their feet dangling in the Mediterranean'. The hand picked fruit is lightly crushed and destemmed, this enables a percentage of berries to remain unbroken and carry out some carbonic maceration in the fermentation, resulting in a more aromatic wine.The fermenting juice is pumped through its skins 4 to 6 times a day and then, post fermentation, the wine is left on its skins for 20 days prior to pressing providing maximum extraction of colour and structure. Like Brut Yellow Label, Demi-Sec is a blend of several good years, but behind its white label is a very different wine, sweeter yet equally mature and balanced. Demi-Sec is a Champagne blended from wines of several good years, each one made of the grapes of Veuve Clicquot's legendary Premiers and Grands Crus. The blend comprises about 56% Pinot Noir, about 28% Chardonnay and about 16% Pinot Meunier. The glorious sweetness of Demi-Sec derives from a weighty dosage of sugar mixed with reserve wine. This is added during dégorgement, after the second fermentation, producing a more soft and supple balance but always retaining the freshness so essential in a sweet wine. The wine is bright and clear, a rich yellow colour with golden shades, with a persistent and delightful sparkle. On the nose it is rich and intense, dominated by nutty, spicy aromas- almonds, nougat, honey and ginger. It is of course sweet on the palate, but this is a refreshing sweetness, not in the least cloying. The taste is well balanced, reminiscent of plums and dried fruits. This finish is both soft and very smooth.
