Description: Straw yellow with a green tinge, this wine opens with a full bouquet of lime and lemon-dominated citrus aromas, followed by caramel butterscotch and a hint of boiled sweets. The palate is full, round and demonstrates a rich mixture of caramel, vanilla, and citrus characters. The finish is fresh with the flavours lingering in the palate.Grapes where harvested at Warwick at 24,5 ºB from blocks with a typical density of 3000 vines per hectare. Sixty percent of this wine spent eight months in new French oak after fermentation in the same barrels. During the time in barrel the lees was stirred weekly to increase the fullness of the wine. Description: The grapes were picked at 25,2 balling and innoculated with a local yeast as soon as they entered the cellar. Fermentation peaked at 28°C and the wine fermented dry on the skins. After pressing, the wine was transferred to second and third fill French oak barrels where it underwent malolactic fermentation. After malolactic fermentation the wine was racked and further aged in barrels for 18 months. Before bottling the wine was lightly fined and filtered. Winemaker's comments:The wine has a deep and intense garnet colour. The nose is dominated by a milky creaminess that is complexed by aromas of almonds, chocolate and pencil shavings. The palate is full round with ripe chewy tannins and flavours like coffee, cherry, cigar box and liquorice. Its balanced acid creates a firm finish that is complemented by luscious and lingering sweetness. Serving temperature: 16-18°C Food recommendation: Serve with rare roast lamb, lamb knuckles stewed with red onions, or a rich pork terrine

There is a silky soft feel in the mouth with chocolate flavours on the palate. The wine has a very broad palate that lingers. Decanting while young will give more pleasure and aroma. Description: The Bergsig Estate has been in the Lategan family since 1843. De Wet Lategan is the sixth generation winemaker and has obtained a BSc degrees in Oenology at the University of Stellenbosch, before joining the family firm in 1990. His brothers Louis and Plum manage the vineyards. Their father Prop Lategan is still very active in the general management and promotion of the wines from his beautiful 400 Ha farm in the foothills of Bainskloof Mountain. Bergsig Estate lies at the narrow funnel-like entrance to the Breede River Valley. The regular afternoon South-easterly breezes have a moderating effect on the summer heat and ensures cool picking temperatures throughout the day. The Bergsig Estate was the first winery outside the coastal region to earn a superior award for red wine. More specifically the 1978 Cabernet Sauvignon. This encouraged Prop Lategan to plant more red varieties and today 20% of all plantings are Cabernet Sauvignon , Merlot, Pinotage, Ruby Cabernet and Tinta Barocca.
