Description: Bay of Fires was born of a desire by BRL Hardy to make cool climate wines of classical structure, combining fruit intensity with refinement, complexity and persistence of flavour. Tasmania's latitude and island status was identified and with its unique climates more closely resembling the classic winegrowing regions of France this has been achieved. Arras is the flagship wine produced by Bay of Fires Winery. 100% Tasmanian, the wine aims to capture a sense of place; the true essence of Tasmania. As with the Bay of Fires range, fruit for Arras is sourced across Tasmania, taking advantage of diverse viticultural conditions and enabling the selection of only the most premium parcels from each region. The extreme cool climate of the Bay of Fires property allows maximum flavour retention through the long slow ripening season. The grapes are hand picked and pressed in close proximity to the vineyards to ensure optimum quality is maintained. Traditional sparkling wine techniques were utilised throughout to enhance the fruits natural qualities. One hundred percent of the base wine underwent malolactic fermentation and the wine was aged on yeast lees. Patience and careful handling have been rewarded with a sparkling wine of the finest calibre. Like the luxurious tapestries from which it takes its name, Arras, Australia's prestige sparkling wine, is skillfully woven together from a blend of Chardonnay 61.5% and Pinot Noir 38.5%. This sparkling wine is a medium straw colour with a gentle green/gold hue. Pristine clarity and a fine, persistent bead further enhances the aesthetics of this wine. Lifted mushroom/truffle and lanolin bouquet typical of aged cold climate Chardonnay, it is complimented by white stone-fruit aromas of Pinot Noir underpinned by yeast complexity. Description: In the renowned Martinborough Terrace region Palliser Estate has approximately 85 hectares under Pinot Noir, Chardonnay, Riesling, Sauvignon Blanc and Pinot Gris grape varieties. Palliser Estate have found that even over the relatively small area they cultivate, there are great differences in soil types and climate which all help to add complexity to the wines it crafts. The Pencarrow range is the second wine of Palliser Estate. Under this label Palliser are able to experiment with the grape to develop new wine styles from traditional varietals. The wine was fermented in a mixture of American and French oak barrels. It remained on lees in cask for seven months with 10% of the wine spontaneously fermented with wild yeasts. Care in the winery has produced a very attractive nose of ripe stone fruits and floral characters with a hint of sweet oak and creamy notes. Description: Sherwood Estate is very much a family business, with Dayne and Jill Sherwood owning and operating it since the late 1980's. The winery is located in the picturesque Waipara Valley, while they have four vineyards also owned by Sherwood Estate in the famed Marlborough Region, at the top of the South Island. Based on nearly twenty years of growing grapes and making wine, Sherwood Estate now specialise in Sauvignon Blanc, Pinot Noir, Chardonnay and Riesling. Sherwood Estate produce three ranges of wines the Clearwater Range, the Sherwood Estate Range and the the Stratum Range. The Clearwater range represents the very best varietal single vineyard wines from Sherwood Estate's own vineyards in Waipara. This is very much a hand crafted range both in the vineyards and winery, here meticulous care is taken to ensure that the wine produced is of the highest quality and reflects each vineyard's unique characteristics or 'terroir'. The fruit was hand harvested from the West Melton vineyard and in the winery a gentle pressing was undertaken with the juice fermented and aged on lees in French oak barriques . Following a light fining and filtration the wine was bottled. Matured on the lees to give this wine its wonderful complexity and character, this Chardonnay displays richness and concentration of flavour.
