Description: The Parker Estate Vineyard, situated at the Southern end of Coonawarra, was established in 1985 on the rich Terra Rossa soil over limestone of Coonawarra and carries Cabernet Sauvignon as the predominant variety with minor plantings of Merlot and Petit Verdot. Each vintage small quantities of the best fruit is selected for the Terra Rossa First Growth. If in any one year the grapes do not reach the high standard set, then no Terra Rossa First Growth is made, as was the case in 1992, 1995, 1997 & 2002 . In those years the wine released was under the Terra Rossa Cabernet Sauvignon label. Vintage 2000 was one of the earliest harvests on record (6 x 75 cl)

Description: Colour: Dense and bright ruby red with purple hues at the rim. Aromas: The nose is a study in classic Coonawarra Cabernet Sauvignon. Ripe cassis fruit flavours are framed by dark chocolate nuances with minty notes also evident. Flavours: The wine delivers excellent balance between the intense Cabernet fruit flavours, fine tannins and integrated oak. The palate delivers an abundance of juicy blackcurrant Cabernet Sauvignon fruit flavours with a long finish. McWilliams ICON Cabernet Sauvignon Coonawarra South Australia
Description: Colour: Deep crimson with a ruby hue.Bouquet: Powerful and complex, with cassis, blackberry and plum aromas accompanied by toasty vanillin oak and dark chocolate characters derived from barrel fermentation and maturation. Palate: Complex palate with rich cassis and blackberry fruit flavours highlighted by characteristic minty notes. Dark chocolate and spicy oak flavours compliment this full bodied wine style, which displays a long, velvety, fine-grained tannin finish. Cellaring: Drinking well now, but will develop further with up to ten years in the cellar. Winemaker Notes: After crushing, the must was fermented in headed-down stainless steel fermenters. The juice was pumped over three times a day for seven days to ensure maximum extraction of colour and flavour. The juice was then drained from the tank and the skins pressed. The wine then completed primary and malolactic fermentation in a combination of new and used French and American oak barriques, hogsheads and puncheons. Following fermentation, the wine was racked off lees and returned to the same barrels, where it was matured for 20 months. Premium fruit for this wine was sourced from McWilliam's vineyards in the famous Coonawarra district in South Australia. The fruit was harvested in mid March to early April. (12 x 75 cl)
