Woodthorpe Cabernet/Merlot has a bright crimson colour, with aromas and flavours of spice, plum and mulberry. The palate is long and fine, with well-integrated cedary oak and a sustained finish. It is a blend of 28% Cabernet Sauvignon, 32% Merlot, 24% Cabernet Franc and 16% Petit Verdot. The grapes for this wine were hand-harvested between April and the May . The individual parcels of each variety from each vineyard were separately crushed, destemmed and given warm, plunged fermentations. The resulting wines remained on skins for extended maceration before pressing and malo-lactic fermentation in tank. They were run off to a mixture of new and seasoned 225-litre oak barrels, still as separate components. Following maturation, topping and racking, these individual wines were blended to create a complete wine that then received further barrel ageing before egg white fining and filtration prior to bottling.
