Here he specialised in the wines of Sancerre and Pouilly-Fume which he has very quickly gained a leading position with the Michelin-starred restaurants in France. Today, with 70 acres of vineyards in the two premier appellations of Sancerre and Pouilly-Fume, bolstered by 50 percent purchased fruits, PascalJolivet produces classically styled Loire red and white wines. 100% Pinot Noir it has spent 12 months in barrel and bottled without filtration. This has produced a very clear ruby coloured wine with crimsons reflections. Showing concentrated flavours of red fruits including currant and cherry there are spiced notes evident from the barrel ageing. The palate is displaying ripe, very pure, concentrated fruit while the attack is very elegant culminating in a persistent finnish. (6 x 75 cl) Price: £232.77
