This wine is a blend of 80% Cabernet Sauvignon and 20% Petit Verdot displaying a fruit forward style, with a fresh, juicy palate showing a touch of cassis and menthol, finishing with balanced ripe tannins. Ashbury Grove range is made by Kingston Estate, based at Kingston-On-Murray which is approximately 220 km from Adelaide in South Australia. Kingston Estate was founded by Sarantos and Constantina Moularadellis, who developed their 40 acre. Today Kingston Estate is the 10th largest wine producer in Australia and remains one of Australia's largest family-owned wineries. Sourced from vineyards in the Riverland area of South Australia, where Kingston Estate have been developing their vineyards since 1998. Using both rotary and static fermenters, both varieties have been kept separate up until the final stage of blending. Description: The grapes for this wine were harvested on 4/4/98 and 22/4/98 with an average of 24.0 brix and an acid level of 9.0g/l. Fermentation over 45 days at a cool 12 degrees retained maximum natural fruit flavours. The resulting wine has 13% alcohol, 17.4 grams per litre residual sugar and 8.7 grams per litre titratable acidity. Grove Mill wines are made to be the best they can be. Deliberate fruit orientation with full-bodied richness and concentration to the point of balance defines the style. Description: Medium bodied with good mineral concentration this is a blend of Verdhelo and Chardonnay. Displaying soft floral note aromas that develop on the palate the well balanced acidity gives way to an enjoyable finish. Sourced from vineyards in the Riverland area of South Australia, where Kingston Estate have been developing their vineyards since 1998. The fruit was picked at optimum ripeness and immediately crushed with total de-stemming. The must was pressed to steel tanks and left to cold settle overnight. Fermentation was carried out at a controlled temperature in steel and the wine was racked off the lees in order to maintain the fresh fruit character. Finally, it was bottled after cold stabilisation and filtering and ready to drink on release.

Description: The grapes for this wine were harvested from 6/4/97 to 29/4/97 with an average of 24.2 brix and an acid level of 10.5g/l. Fermentation over 2 months at a cool 12 degrees retained maximum natural fruit flavours. Retained on yeast lees for 9 months prior to bottling in June 1998. The resulting wine has 13.5% alcohol, 3.7 grams per litre residual sugar and 6.9 grams per litre titratable acidity. Grove Mill wines are made to be the best they can be. Deliberate fruit orientation with full-bodied richness and concentration to the point of balance defines the style. Determining vineyards, selecting their fruit at harvest and keeping only the wines with the best structure, flavours and fragrances ensures the Grove Mill philosophy is exercised. This wine has been cool fermented to retain the maximum natural flavours. Partial barrel fermentation in French and American Oak barriques and partial malolactic fermentation have added complexity to the bouquet and palate. Description: Attractive plum purple coloured Shiraz with a spicy nose redolent with red berry and black cherry fruit. The palate is medium bodied and soft, packed with crunchy blackberry and cassis flavours and a well integrated, rounded structure smoothed over with a gentle touch of vanilla. The juice was fermented in both rotary and static fermenters and pumped over 2 to 3 times per day to extract the colour, flavour and tannin. Importantly the varietal flavours were retained through judicious control and exposure to phenolic spoilage was reduced. Making sure the berries were picked at their optimum levels, night harvesting was employed at approximately 13° to 14° Baume thus avoiding any likelihood of harsh phenolics or loss of flavour. Small batch fermenting in static fermenters with a neutral yeast has enabled full fruit flavours to develop.
