The grapes for all of Cuilleron's Condrieu's are harvested by hand, and when you see the precipitous slopes of the appellation you can see why. All the wines are fermented in French oak barrels. A portion of the wine is then aged in oak while the remainder is transferred to tank to await the blending. This Viognier has pineapple and hay aromas with some by floral and herbaceous nuances. At the turn of the century a handful of vines growers entirely renovated this vineyard. The wines produced from the viognier grape variety, are exclusively white and are renowned for their bouquet of violets and apricots. As with all Cuillerons Condrieus the grapes for Les Chaillets are all harvested by hand but from selected older areas. All the wine is fermented in oak, 60% of which is new. Vinified dry from grapes harvested in September and October, Cuilleron vinifies his various vineyard parcels separately, then puts together his wines in the weeks before the bottling. Wonderfully opulent and perfumed on the nose with dollops of honey allied to blossom and spicy complexity. The palate is rich and full again with great acidity, giving the wine exceptional balance. This wine is made with Syrah grapes and the old vines used are between 20 and 40 years old. The grapes come from a selection of the best vines on terraces and hillsides where the soils are sandy granite and not very deep, while neither insecticides nor acaricides are used. After the manual harvest the grapes are picked out, crushed and partially picked off from the bunch. Next, the wine is put into oak barrels and malolactic fermantation occurs and finally the wine is aged in oak for 18 months. This is a bright red coloured wine with a bright and crisp palate showing good fruit flavour and strong finish.
