Description: This sparkling wine is produced by the Charmat method which consists in a second natural fermentation in the tank. We add natural yeast and sugar to our ''cuvée'' . Then the fermentation in tank lasts four weeks and permits the birth of the bubbles which are naturally produced. The result is a natural sparkling wine. With a pale pink colour, this wine has fine bubbles, with a red fruit aroma of raspberry and redcurrants, supple with fruity finish.

Description: TASTING NOTES Deep purple in colour, on the nose this wine delivers a classic Carménère nose of spice, black cherry and mocha. In the mouth notes of boysenberry, cassis, black tea and fragrant herbs combine beautifully leading to a long finish backed by soft, supple tannins. Oak 25% of the blend was matured for 7 months in second and third use French and American oak barrels. Winemaking The fruit was destemmed and crushed to tank wth the fermentation being carried out by selected yeasts with temperatures peaking between 28ºC and 30ºC . Each tank was given 2 pumpovers daily during fermentation and received a 1 week post fermentation maceration before being pressed off followed by a natural malolactic fermentation in tank. This wine was then partly barrel aged with the remainder being matured in stainless steel. The blend was then assembled from tank and barrel components before being lightly filtered and bottled. Vineyard La Capilla, located in Colchagua Valley . Sourced from Carménère blocks with an average age of 16 years. (12 x 75 cl)

Description: TASTING NOTES Intensely violet in colour, on the nose this wine exhibits classic Malbec notes of blueberry, black cherry and violets. In the mouth lush flavours of freshly picked boysenberry, raspberry and blackberry give way to notes of chocolate and mocha. Fresh acidity and soft tannins combine to give a long, elegant finish. Oak 25% of the blend was matured for 5 months in second and third use American oak barrels. Vineyard Sourced from our San Carlos and El Olivar Estates, bot located in the Colchagua Valley . Harvested from Malbec vines with an average age of 6 to 8 years. Description: TASTING NOTES Deep ruby red in colour, on the nose this wine exhibits lifted notes of blackcurrant, fig and date. In the mouth opulent notes of plum, dark chocolate and espresso bean dominate. A well integrated oak backbone backed by firm yet round tannins leads to a long finish. Oak 100% of the blend was matured for 16 months in French oak barrels. Winemaking Techniques Fruit was hand harvested before being destemmed and crushed to tank. The must was then given a 5 day cold soak at 10-12 º C in order to increase aroma extraction. The must was heated and inoculated with selected yeasts with temperatures peaking between 28 and 30 º C during the fermentation. Two pumpovers were carried out daily during fermentation follwed by a 2 week post fermentation maceration before pressing. A natural malolactic fermentation which started in tank was completed in barrel. The wine was then barrel aged for 16 months before being racked to tank, lightly filtered and bottled. Vineyard San Carlos, located near the town of Cunaco , Colchagua Valley . Sourced from Cabernet Sauvignon blocks with an average age of 50+ years. (12 x 75 cl)

Southbank Estate Chardonnay Hawke's Bay NZ
Description: TASTING NOTES Lifted, white-fleshed stonefruit combined with vanillin and some nuttiness derived from barrel fermentation in new oak. A softly textured and creamy palate and a wine suited to serve with white meats and roasted vegetables. VINIFICATION Gently crushed and pressed to minimise skin contact, the resulting juice was settled overnight at cool temperatures with the aim of taking clean, clear juice to ferment. The juice was then inoculated with a Burgundian yeast strain before being filled to barrel and tank. Following fermentation the barrel ferment component was aged on its yeast lees for six months with regular battonage. At the end of six months the tank and barrel fermentation components were combined and the wine was given light fining and filtration prior to bottling. MATURATION 54% fermented and aged in new and seasoned French and American oak for six months. (6 x 75 cl)

The palate is mouth filling, supple and succulent with robust tannins and fresh acidity. Elegant and balanced, this wine will age beautifully. Alcoholic fermentation occurred in steel tanks for 10 days. After pressing, the wine was settled and underwent malolactic fermentation in tank. The wine was then blended with 10% Cabernet Sauvignon, barrel maturation took place in Nevers barriques for 24 months. After bottling, the wine was further matured for 24 months before release. Description: The handpicked grapes were gently de-stemmed and lightly crushed to leave a large portion of uncrushed berries. Fermentation took place in an open top stainless steel fermenter and the cap was hand plunged four times daily for optimum colour and tannin extraction. A short post-fermentation maceration helped complex the tannins, softening and stabilising the wine. The wine was subsequently aged in new French oak barriques, with malolactic fermentation taking place in tank before going to barrel. Regular racking for clarification took place during ageing in barrel. The wine was blended after 17 months oak ageing and bottled without fining or filtration. Described by one expert as ''a wonderful balance between fruit and concentration. I like very much the softness of the tannins. Very good winemaking, great wine.'' (6 x 75 cl)
