They are destemmed, but not crushed, then they are conveyed into temperature controlled stainless steel vats, where alcoholic fermentation and maceration take place. After completing a full malolactic fermentation, the wine is transferred into barriques. The oak is 100% French, and comes from Allier, Chatillon, Nevers, and Troncais. It is 30% new and 70% one year old or two year old for the Sangiovese, while it is 80% new for the other grapes. The wine is regularly racked and tasted during the whole barrel maturation, which may last up to 14 months. At the end of the élevage, the best lots are selected through extensive tasting, and they are assembled to create the final blend. After bottling, the wine rests for at least three months before release. This wine is a blend of 90% Sangiovese and a little Merlot, Syrah, and Cabernet Sauvignon and is deep red in colour. The nose is full of concentrated ripe fruit and oak that develop on the palete as the dark fruit flavours combine well with the lively acidity and powerful tannic structure leading to an enjoyable, sophisticated finish. Its name is an ancient Italian word designating a noble riding horse used by medieval knights for travel, parades or tournaments. Great care is taken from the vineyard to the winery when producing this blend of 55% Merlot and 45% Sangiovese which is released no sooner than 26 months after harvest. Great care is taken in producing this wine from the separate pressing, fermentation and elevage of the Pinot Blanc and Chardonnay grapes; through to the barrel maturation that takes 9 to 12 months in French oak, 50% new and 50% one year old, that comes mainly from Troncais and Vosges, as well as from Allier. The final blending takes place in stainless steel, the wine is then bottled shortly after, and rests for about six months before release. This blend of 65% Chardonnay and 35% Pinot Blanc is a pale yellow coloured wine with floral and herb aromas. Showing white fruit flavours, cream and a little minerality this is a rich sophisticated wine with an enjoyable finish. Additionally: Between 1988 and 1991 the wine used to be called Batard-Pinot, and it was a blend of Pinot Blanc and Pinot Gris. Between 1992 and 1994, the name was Batard , because Chardonnay had been added to the blend.
