Clique Chardonnay Viognier Minervois
Description: This wine is a blend of 55% Chardonnay and 45% Viognier that is showing a pale straw colour with an inviting, elegant nose of tropical fruits as well as a lovely hint of jasmine culminating in a long and rich palate that ends with a zesty citrus finish. The mature vines of the Chardonnay bring a solid palate structure dominated by ripe pear flavours, married with the aromatic flavours of peaches and lychees from the ripe Viognier fruit. All the fruit is sourced from the Minervois in the South West of the Languedoc region, Southern France. The Chardonnay comes from older, low yielding vines on the lower slopes of the Montagnes Noires, while small vineyards on the banks of the River Aude are the source for the Viognier. Here soils with high clay content produce vigorous young vines, with regular thinning of the foliage so that the open canopy allows maximum ripening and intensity of flavour. The fruit is harvested in the early hours of the morning when temperatures are coolest to ensure capturing maximum floral fruit characters of the Viognier grape. Both Viognier and Chardonnay are allowed to remain on their skins for 4 to 6 hours after crushing to achieve a balance of palate structure and colour. Next they undergo a long, slow, cool fermentation, the Chardonnay with a traditional Burgundian yeast, while the young Viognier fruit is fermented with an aromatic yeast often used with Sauvignon Blanc.
