Lisa McGuigan Tempus Two PEWTER LABEL Merlot HunterValley Description: Dense Purple Nose Typical Merlot varietal character showing perfumed cherry and tomato bush. Some toffee cinnamon charred oak give additional complexity. Palate A soft full bodied wine with fine grained tannins, fleshy fruit and good persistence. General The vintage in the HunterValley is characterised by cool conditions and persistent rain through out the growing season. In early January extremely hot weather stalled the ripening of fruit and it was necessary to slightly dehydrate the fruit on the vine to attain optimum balance. The grapes were machines harvested at night with the fruit being chilled down to 8 degrees into a conventional stainless steel fermentation vessel. The crushed grapes were cold soaked for approximately 5 days when the onset of wild fermentation occurred, at which point a low level of yeast was also added. On completion of fermentation the grapes were pressed via a large Diemme airbag press into another vessel where the wine was allowed to complete both primary and secondary fermentation. The wine was clarified with some going to barrel for maturation and a portion being held in stainless steel. Prior to bottling the wine received a mild fining with egg whites (6 x 75 cl) Price: £78.41
