De Bortoli YARRA VALLEY Pinot Noir Victoria
Description: Appearance :Full ruby in colour. Bouquet :Ripe pinot noir fruit aroma with well integrated oak. Palate :Full bodied with intense ripe plum flavours.A wine with great texture and softness. Winemaking:A combination of winemaking techniques are used to produce a final blend with complexity and balance.These include cold maceration before fermentation,inclusion of whole berries and allowing the wines to ferment naturally.The components remain separate until final blending.Maturation is completed in new,one year old and two and three year French barriques for 10 months for all parcels.Minimal handling and filtration is adopted to preserve fruit flavour.

Description: Appearance :Pale lemon in colour. Bouquet :Intense floral aromas combine with lime and lemon citrus characters. Palate :A flavoursome palate displaying the typical floral and citrus characters of riesling.A crisp acid finish with a hint of sweetness makes this a refreshing wine. Suggested Cuisine :A great companion to chicken chow mein,grilled seafood or spring vegetable frittata. Cellaring :This wine is best consumed whilst displaying its fresh fruit flavours,but can also be cellared for up to two years. Winemaking:Selected parcels of fruit were harvested at optimum baumé levels to achieve the floral and citrus fruit characters desired for this fresh,fruit driven style of wine.The riesling from the King Valley was cold settled prior to fermentation to assist in maintaining the fruit characters of the wine.The fruit from each region was fermented separately prior to clarification and blending. De Bortoli YARRA VALLEY Shiraz Viognier Victoria Australia
Description: Appearance :Vibrant purple in colour. Bouquet :Rich,complex aromas of perfumed shiraz fruit. Palate :A full fruit palate with berries,pepper and subtle oak. Cellaring :The wine should continue to develop complexity for 4-8 years in a good cellar. Winemaking:Fruit is destemmed to open fermenters with 10% whole bunches and is cold soaked and fermented on skins for a total of 12 days.Both foot plunging and pumping over were used to extract colour and flavour and temperatures reached 35 ºC at the peak of fermentation.All parcels were fermented to dryness.The resul- tant wines are racked,blended and matured for 10 months in 25% New French oak and 75%2 and 3 year old French barriques before blending and bottling.A percentage of Viognier was added to the blend contributing perfume and complexity and overall aroma and flavour. Description: Appearance: Light straw with attractive green undertones. Bouquet: Clean, fragrant, slightly grassy aromas. Palate: The palate exhibits intense gooseberry and full tropical fruit flavours with delicacy and freshness, balanced with good acidity. Cellaring: Enjoy this wine now whilst young and fruity or cellar for up to two years. Winemaking: Fruit for this very fresh, aromatic wine style is machine picked at night when the air is cooler and gently pressed at the winery. The juice is clarified and fermented at cool temperatures for 4 weeks. The youthful wine is then fined and filtered directly to bottle ready for immediate enjoyment. The aromas and flavours are at their most intense whilst the wine is young and fresh. (12 x 75 cl)

Winemaker 's Comments:Free run juice from Cabernet Sauvignon, Ruby Cabernet and Malbec were used to make this delightful pink drop.It's sweetness,acid and flavour combine to make an enjoyable summertime wine.
