Domainede Triennes SAINTE FLEUR Viognier Vin de Pays du Var
Description: Sainte Fleur is explosive on the nose with apricot, honeysuckle and honey aromas. It has great power and intensity, combined with a beautiful balance between richness, acidity and minerality. This Viognier comes from a 13.50 ha vineyard occupied by vines between 25 and 30 years old vines, as well as 4 to 6 year old new plantations. Once in the winery the fruit ferments in temperature-controlled tanks. Next, some of the wine then undergoes malolactic fermentation, while the rest is blocked at an earlier stage to retain its freshness. The lots are subsequently blended. In the late 1980's Jacques Seysses, founder of Domaine Dujac, and Aubert de Villaine, co-owner of Domainede la Romanee-Conti, started looking for a vineyard in the south of France. They were driven by the conviction that some great wines could be produced in the Var, an area typically known for its rosés and thin table wines. Aubert was interested in joining as a silent partner, and a good friend from Paris, Michel Macaux, wanted to invest both time and money into the venture. They purchased an estate and it was renamed Domainede Triennes, after the triennia, festivities in the honour of Bacchus that took place every 3 years in Roman times.
